Fiddleheads - what do I do with them?

I finally went and bought fiddleheads. They are in season in southern Ontario right now, but I have no idea what to do with them, so I only bought around a cup and a half. If they're good today, I'll definitely buy some tomorrow too. Any recipes would be greatly appreciated by the very entertaining and knowledgeable SE readers/crew!

Watching food shows for the chef, not the show.

I was having an interesting conversation with a female friend of mine (I'm male), and apparently, there's quite a few chefs that are admired for their looks (I heard the names of Anthony Bourdain and Tyler Florence). What about you, serious eats reader, do you ever watch a show just because the chef is drool-worthy?

Disclaimer: I've watched a few reruns of Everyday Italian, if you know what I mean, BUT the recipes are actually good.

I'm pretty new to seriouseats, but I was wondering if there could be a way to notify you if someone commented after you, or responded to your comment (example: "@deepitbhatia"), something similar to facebook, where when you view your account, you can see if someone has responded to your comment.

High Maltose Corn Syrup?

I bought a box of General Mills Vanilla Bean Latte granola bars, for snacking on throughout the weak. To my surprise, it had high maltose corn syrup as the first ingredient. I know that maltose is a disaccharide with two glucoses, but how does this differ from high fructose corn syrup? Is it better or worse?

note: I'm posting from Ontario, and our laws don't specify labelling HFCS, it can say "glucose-fructose" and that's also an ingredient, although far near the bottom of the ingredients list.

Recipes needed for a fundraiser.

DECA in our school is doing a fundraiser, like every year, for the Herbie Fund, which gives life saving surgeries to children in third world countries. We sell food during lunch periods as part of the fund raiser. What recipes do you recommend for easy to prepare, delicious, relatively mess free foods that can appeal to a wide variety of teenagers? (over 2100).

Calling all athletes! Energy-boosting foods needed

I'm a high school student that happens to play football in the fall and rugby in the spring and summer. I just can't seem to find more than a handful of foods that can re-energize me and put me on track for the rest of the evening so I can work productively without feeling worn out.

Granola bars failed (too much sugar, I think).
Nuts work...but there's gotta be some more foods that keep me going, at least from 5:00-11:00 PM.

If there are any athletes, or if you have any sort of experience with energy-boosting, lower sugar foods, please, voice your expertise in the comments! What do you do?

Birthday Cake

if you really want to get creative, gulab jamun are balls of deep fried dough soaked in cardamom laced syrup (I promise you, it's paula deen free).
nothing beats warm gulab jamun over cold vanilla ice cream.

Burger + Cheese = ??????

my recurring hindu guilt (lol) prevents me from eating hamburgers more than 1-2 times a year, so when I do eat them, it's 1/2 pound patties with s&p, and caramelized onions and mushrooms. I'm not a big fan of cheese on burgers because the processed stuff feels like plastic, and the expensive real stuff is not worth putting on the meat, I'd rather enjoy it on its own, or where it takes ore of a front role.

for the rest of the bbq season, we have these homemade chicken/pork hybrid burgers with chile, garlic, and s&p seasoned patties. glaze with hot sauce (I use tony roma's) during the last few minutes, and serve with bacon and blue cheese. this is where the cheese has a chance to shine.

How do you eat your hot dogs?

BBQ sauce, dijon, and chopped onions.

I've been wanting to try and make my own bacon dogs, first by lightly heating the bacon in a pan to hopefully get some fat rendered off, then wrapping around a hot dog and grilling. Would it work? How's the risk for flare ups and such?

Food to gain weight on

Do you want to gain muscle or fat mass? In both cases, you need balanced nutrition, but in greater caloric amounts. Try making a turkey + BLAT sandwich (bacon, lettuce, tomato, avocado), and drink whole milk with it for lunch. Nuts, seeds, and dried fruits are very calorie dense, so you could use them to top up salads, rice, or just to eat as a snack throughout the day.

@Perky: next line (warning, cheesy) - No mountains to climb or rivers to cross, you don't even have to try...

@Kerosena, @wellred, @embolini9:There must have been a secret mom convention somewhere! To this day, the only time pop gets drank with a meal is with pizza.

Strangely enough, yogurt and milk are never to be consumed in the same meal according to my family. Old Indian rule I guess. No other Indians or indo-Canadians I've met drink milk with meals that have yogurt.

My new favorite is Robyn Lee's chocolate chip cookie from a previous Serious Eats post. Those cookies are amazing! If I'm not in the mood for a mess or have little time, my go-to is a cake mix cookie. (I tend to have a box of cake mix in the cupboard most of the time). There are different variations, but my favorite is chocolate cake mix cookies with Andes mints in the center. Super-simple and a crowd pleaser!

Sugar. My favorite is slightly lemony and dipped in moderately large grains of sugar. I also like snickerdoodles. However, I have yet to try baking them; I've made a lot of "meh" chocolate chip cookies, though.
My boyfriend considers sugar cookies worthless. I am determined to prove him wrong.

If the chicken you are roasting in a pyrex dish (I don't know why, OK?) has drippings starting to burn, don't deglaze it with cold wine, while still in the oven. It will effectively end your dinner, and derail your request for investors in your fledgling catering operation.

I've got another one:

DO NOT overfill a fryer and then throw A LOT of french fries into the hot oil. What you will have is an upheaval of oil (think Lava shooting out of a volcano), then a waterfall of oil onto the counter and susequently the floor. It's still very hot though if you have to clean this up-please remember that. Paper towels are not going to sheild you from getting burned. But, wrapping towels around your hand will. I would like to add-I did not do this (well dropping in the french fries anyway).

4. easy to make
