Vegan: Meta-Eggplant Sandwich with Rich Tomato Sauce

I'm really into this idea of vegetable based mayo. I need to try that.

In terms of cheese, I would echo comments above on trying nut cheese which, when made well, is remarkably similar to dairy-based cheese. I mean, what is cheese - fatty solids pressed from their own liquid and emulsified with varying amounts of that liquid. Nut cheese is basically that, which is probably why the taste is so close.

Seriously Delicious Holiday Giveaway: Zingerman's Praise the Lard Gift Box

My parents grew up kosher so we didn't have pork at home when I was a kid. My first pork experience was when I was 7 or 8 at a friends house eating a pork chop for dinner. I remember being terrified that god would smite me right there for eating it which made the meal sadly anti-climactic.

Cook the Book: 'Ruhlman's Twenty'

Patience is the most important technique for me in the kitchen. Staying patient while the pan heats up to sear something, while the onions slowly caramelize, while the risotto thickens. A lot of great dishes take time and monitoring and it took me a long time to learn not to rush it.

Our only tradition at this point is cranberry sauce. Everything else changes each year but the cranberry sauce remains. Two pounds cranberries, one cup sugar, quarter cup bourbon, sprinkling of nutmeg. Best cranberries ever.

Have You Ever Had Airline Food You Actually Liked?

About 15 years ago I remember flying British Airways from London to Johannesburg and enjoying my (kids) meal which I remember as a chicken patty sandwich and fizzy apple juice. But I'm going to have to vote for Emirates. Not only was I given food on a several-hour flight from Australia to New Zealand, but it was really delicious. I don't remember what exactly it was, but I remember being pleasantly surprised and then a little sad that I wasn't flying the same airline back.

An Introduction to South African Cuisine

My favorite South African meal, which my ex-South African parents make for special occasions is Monkey Gland Steak. It's a brisket dish with a spicy tomato-based sauce, similar in flavor to Steak Pizzaiola. Not only is it delicious, it's pretty amusing to tell people that's what you're having for dinner.

Fun fact: Monkey Gland Steak, as far as I know, was created in a hotel in Cape Town (I think). A French chef had been invited to the hotel for a month and he tried to make classic French dishes for the Afrikaans patrons. They were continually unimpressed and so in a sort of revenge, the chef decided to make them a steak dish with all the bottled sauces he could find - ketchup, Worcestershire, piri piri, etc. The dish, unfortunately for the chef (and the reputation of Afrikaans cuisine), was a big hit.

What Foods Are Banned from Your Office?

@Jordan_M (and all the other haters of fake butter on microwave popcorn). It's actually incredibly easy and cheap to air pop popcorn in the microwave. Just take plain unpopped kernels, put a handful in the bottom of a brown paper lunch bag, fold over a half-inch of the top twice and then pop for about 2 minutes (depending on the strength of your microwave). The only downside is that since there aren't any directions, you have to pay a little more attention to when the popping slows down to avoid burning it. But at the same time, when it burns the smell isn't anywhere near as bad since you aren't burning chemicals.

Do You Put Ranch Dressing on Pizza?

I had never really heard of putting ranch on pizza as general practice (although I did see it in college). But the town I grew up in had a townie pizza joint which made really awesome honey mustard sauce and everyone would ask for some to go with their pizza. I personally love to dip pineapple pizza in it. (We love it so much that they started selling frozen pies with a small container of it for people to take back to college with them.)

Turf War: Boston's Best Ice Cream

I have to agree with all the praise for JP Licks, it's the best ice cream in the city. However, if you're willing to travel down to the suburbs, Hilliards House of Candy in Easton has unbelievable ice home made ice-cream which is made even better by the homemade treats that go into a lot of the flavors. The chewy caramel turtle soup (made with homemade caramel-nut "turtles") is outstanding as is the coffee brownie madness. And if you like over the top decadence, Swamp (which is not always available, it's a rotating special) is stuffed full of every chocolate candy it can hold.
