Weekend Cook and Tell: Going Solo
I love cooking and eating. Sometimes (majority) I like cooking for people, but sometimes I like cooking things that I know aren't down others' alley (whether because of weirdness, process or just expensiveness of certain ingredients!) by myself.
Last night, I cooked a lovely meal for myself. I sauteed sweet potato rounds and asparagus with olive oil, salt and pepper. Once the asparagus was done, I layered them on some bread, topped with slices of my FAVORITE local brie I got from our farmer's market (ColoRouge, in Boulder) and stuck it in the broiler. Served with the sweet potato rounds. Mmmmm. So enjoyable.
Needed: a meal that would win a man's heart!
I actually won my boy over with spaghetti, hahah. Linguine tossed with good olive oil, fresh basil, lemon juice, kosher salt and some coarse pepper. Served with grilled shrimp (just olive oil salt and pepper) and some thin roasted asparagus.
Deliciousssss.

@kgocat and steen --> do you just use a normal risotto recipe and substitute the same amount of broken pasta? or do you cook longer, use less liquid...etc? this sounds so yummy i want to recreate it!

I like creamy, yummy cheesey sauce pasta dishes (like a thinner macaroni and cheese sauce crossed with alfredo) with a fried egg over top!

Pizzeria Mozza Just About as Good As You've Heard
Mmmmm that clam pizza looks divine! But I definitely think there's wayyyy too much crust on all of those pizzas - especially the misordered first "speck"

@katejon103 - I've woken up in the middle of the night, still very full from dinner mind you, and eaten the rest of the pumpkin macaroni and cheese I made because 1) it's SO good and 2) my brother is 6'8" and can eat our entire fridge in one sitting and I knew how much he wanted my leftovers!

How much salt is too much salt?
I agree on the kosher salt comments - it's a completely different product.
One of my favorite snacks is a toasted piece of brad (ezekial) with sliced avocado, a heavy drizzle of lime juice, and then a light sprinkle of kosher salt. But I would NEVER do this with table salt - gross gross gross.
The only thing I used table salt for is baking and soups. Pastas, fishes, meats, casseroles, eggs... I always use kosher.

Not too outrageous but I I live in Texas and moved to Colorado to go to school and lo and behold... they have absolutely NO good queso :( so I bought a crockpot and for every big food-eating social event, bring a huge vat of cheddar-jalepeno-jack-black-bean-avocado-pico goodness.

My favorite way to prepare seafood comes from a Cooking Light recipe, actually. It's grilled salmon with a mustard-apricot-honey glaze served with parmesan-spinach-orzo pilaf... I've served for dinner parties, Christmas dinner, anniversary with my boyfriend and just casual dinners and it always gets rave reviews - great flavors. yumyumyum. and my favorite way to eat it?? ANY! shrimp cocktail, fish tacos, grilled salmon/tilapia, fried catfish, in parchment... I love seafood!

Mmmm fajitas with a filling of slightly charred red/yellow peppers and onions. Top it off with lettuce, cheese, avocado and salsa.
So simple and delicious.
