When I started to read this blog, really! But seriously, it was when I realized the massive difference between a light, fresh, loosely-packed patty and those frozen pucks I had been eating for years. Dinner Tonight: Cayenne-Rubbed Ribeyes with Lime Butter

@Allez -- What MJ said! I got some muscovado (close, I guess) for one recipe, and ended up using it for all sorts of baking and for sweetening coffee... adds that wonderful roasty, caramel, molasses flavor to anything in a pinch.

AHT Poll: How Do You Like Onions on Your Burger?

The whole thing for me is that they have to be thin; massive hunks of raw onion are my LEAST favorite topping, while some paper-thin slivers of raw onion can add just the right tang to the burger. It's a toughie.

I always assume that I would like it pre-assembled, but then it shows up open-face and that tomato doesn't look as ripe as I'd like it... Boom! Easy removal! It's either no inconvenience at all (if I'm very happy with all the toppings) or it is a handy chance to assess my rabbit-food. Great all around.

Japanese Fusion Burgers from the Marked5 Truck in Los Angeles

I actually ran into this place for the first time tonight. I think if you remove the crazy demand these trucks have established, they start to work out pretty well: there are 4 or 5 trucks with various fusion tacos and things floating around USC, and when you can get a korean bbq burrito in 5 or 10 minutes it can make your day a lot better.
I'm with you on the rice utterly falling apart, grey patty, etc. However, mine came wrapped with some nori, and that made it much better. My mouth interpreted it as a sort of overblown, beef sushi which actually worked out. If you expect a burger, though, you're in for an unpleasant surprise.

They gotta perfect the rice bun and not cook the patty to a crisp, but conceptually I think it has some promise.
