@Allez -- What MJ said! I got some muscovado (close, I guess) for one recipe, and ended up using it for all sorts of baking and for sweetening coffee... adds that wonderful roasty, caramel, molasses flavor to anything in a pinch.

When I started to read this blog, really! But seriously, it was when I realized the massive difference between a light, fresh, loosely-packed patty and those frozen pucks I had been eating for years. Just like coffee, once I started to grasp the vast variety in styles and quality, a whole new world opened up.
