Harvesting and Drying Herbs
Last month i picked up an electric food dehydrater to make quick work of the zillion jalapenos and serranos in my deck gatden, it quickly dried out my oregano and thyme too. It was a $60 investment via amazon.com but so worth it.

Tuesday is soup night, and this week I made the NYT green tomato soup (http://www.nytimes.com/2009/09/16/dining/161arex.html?_r=1&ref=dining) with crumbled bacon and crunchy brioche crutons. We'll need something to dip in it...thinking cheesy toasted crumpets from Trader Joes.
I met Rick Bayless! (And I still can't believe it)
That is fantastic! Congrats - i'm excited for you!!

Pre-Made soups
Every once in a while we really only have time/energy for pre-made soups, so I stock up on the Trader Joes boxed soups...just had the Creamy Tomato with a grilled cheese last night....have had a lot of luck with the butternut squash and corn chowder too...

The 5 Phases of Caffeine Intake
It does look like a crazed Strong Sad....i'd like to see The Cheat on coffee! Thanks for sharing, just sent the hub 6 reasons about bacon, since he says it's a close second to me...i think cheese comes in third!
One meal in San Diego -- recommendations?
For casual SD at it's best head to Point Loma Seafood http://www.pointlomaseafoods.com. I've been going since I was 5, no trip home is complete without a stop there. Ah, man now i'm home sick! For a more upscale dinner head to Gaslamp, or for exceptional Mex I second Old Town. Have a fatastic time!
Gadgets: Wusthof Knife and Scissors Sharpener
I just bought this for my hub's father's day gift and he LOOOOVES it! I considered the electric fancy schmancy ones and am glad that I went with the manual sharpener. It works great on our Wustof's & Henckles. I can't recommend it enough :)
Mascarpone...?
At my Trader Joe's it is near the sour cream, crème fraîche & yogurt.
Study finds: Organic food is no healthier than conventional
I eat as much organic and home/local grown for what ISN'T in it: pesticides. And honestly- homegrown *in season* organic produce tastes 1000x better than anything I have ever bought from a big supermarket...or even my beloved trader joes :)
Cook the Book: 'Canal House Cooking, Vol. 1'
Gazpacho with warm sunripened tomatoes, crisp cucumbers, both homegrown of course :), onions, a hit of garlic and mouth puckeringly sharp sherry vinager....yum!
Cook the Book: 'The Barcelona Cookbook'
My first time at Jaleo in DC turned me tapas crazy. The zing of the sherry vinager in the gazpacho made my mouth pucker and the cod fitters just melted into my mouth. Spain is the next European country on my travel list!
Baltimore yummies?
I second Bertha's, good prices & good seafood. Steer clear of the restaurants in the inner harbor, they will be packed. For great dessert hit up Vaccaros on Aliceanna St. If you make it to an O's game you'll have endless yummy food options.
Where to eat in D.C.?
Jaleo for the best gazpacho & tapas, Good Stuff Eatery for yummy burgers, shakes and my fav fries in the city & Cedar in Penn Quarter is new & getting good reviews. Check out the Washington Post's website, it has a ton of reviews for all budgets & neighborhoods.
Food Processor recommendation...
I have a 14 cup magi-mix and love it. After years of making hummus, gazpacho, salsa, etc....in a small machine i finally have some room & all the blades & attachments my heart desires. I scrimped & saved for it, but it is well worth it!

I had a nice brunch at Bar Americann last autumn,(Bobby Flay's joint) everyone thought it was yummy and the cocktails were fun too.
Dear Food Network, Please Stop
It reminds me of what happened @ MTV- "Music Television." They only have music between 5a & 8a...the rest of the programming consists of game & reality shows.
Now I just DVR the few FN shows I like and end up watching the classics & Cooks Illustrated on PBS.
Egg in Toast: What Do You Call It?

*blushing*
Hi everyone.
The holidays are here, so I'm back.
I'll attempt to not be such a spammer on the boards this time.
Thanks for the link to this thread, yayfood.
After starting the daily WFD threads back in September, I have found the "Recently Commented On" tab on the talk front page which seems to work similar to "bumping" a thread on the other forums I visit. So I leave the choice to you regulars: continue posting in this thread and hope others use the "Recently Commented On" tab? Or start a new WFD thread daily?
As for our dinner tonight, we're having an 8 lb. oven stuffer roaster. I'll "kasher" it by soaking and salting it (though it will not be a kosher bird it will finish up moist almost as if I brined it and takes far less time), rub with olive oil and my home made spice rub of kosher sea salt, fresh cracked mixed peppercorns, granulated garlic, Hungarian hot paprika, a dash of cinnamon (I put a little cinnamon in just about everything for the blood sugar regulating benefit), and dried dill weed. That then gets tied with kitchen twine and roasted for an hour to 90 minutes in my Showtime rotisserie. Baked potatoes in the toaster over, and sauteed broccoli (steamed broccoli florets than quickly sauteed in olive oil with minced fresh garlic and salt and fresh cracked mixed peppercorns).
So...
WFD at your home tonight? 8)
Pre-Made soups
Snow's NE Clam Chowder is passable for sure. Nothing to add.
Pre-Made soups
i second the chowders from cape cod. i like them condensed, adding milk.
as a quick snack, though, the lipton cup of soups (spring or chicken w/noodles) are acceptable. and dont require a stove if you have a electric tea kettle.
if you have a dorm stove, the kind in a big open space everyone passes by, if you get a chance, make a serious soup, with dried veggies and rice or barley or noodles... cause you will have people inviting themselves to your meal when they walk by. :)
Pre-Made soups
I also second the Trader Joe's boxed soups..I love the Roasted red pepper and tomato soup and the butternut squash soup is great...I also like the Progresso Macaroni and Bean soup and the Progresso Chikarina soup (NOT to be confused with the Italian Wedding Soup-yuk)
Pre-Made soups
I third Wolfgang Puck suggestion.
I don't mind the Knorr varieties either.
My favourite soups to make:
- Baba's Borscht
- Beef and Wild Rice
- Shrimp with Soy Knots, Bok Choi and Shrimp
Egg in Toast: What Do You Call It?
A Hole in One!!!! My grandfather used to make these for me when I was a very little girl, visiting him in Lancaster, PA. He was not a golfer. He was first-generation American of Swedish descent, who had grown up in Salt Lake City, Utah.
Harvesting and Drying Herbs
I dry thyme, dill, tarragon, sage, rosemary, marjoram, parsley, oregano and the basils that have thicker leaves (Thai, lemon, lime) by rubber-banding them by the bunch and hanging them upside down in paper lunch bags. When the leaves are completely dry and crisp, I shake and pull them off the stems and store them right in the paper bags with the tops folded over.
The herbs with more delicate leaves, like common and Genovese basil and cilantro, I chop/mince very finely, put them in jelly jars and pour in just enough light olive oil to moisten, so that it's like a chunky paste. The jars get stored in the freezer door and whever I need a jolt of cilantro or basil, I scoop out a spoonful and put the rest back in the freezer.
A couple years ago, I was looking for fresh cilantro in the middle of January and couldn't find any, so I bought a tube of it. The label show olive oil and cilantro as ingredients and said to store in the freezer after opening. I was pleasantly surprised at how bright it tasted--very close to being fresh--after a month in the freezer. So now I make my own.
Harvesting and Drying Herbs
remove leaves from stem, place on paper towels and microwave on low at 30 sec internals until dried. I got a food dehydrator at a yard sale, practically brand new, for $15. Works like dream.
Harvesting and Drying Herbs
I have a suggestion for the woody herbs - this won't work for the basils. I just put bunches of each herb in brown paper bags and hang them indoors, on a clothesline-like setup. As long as the leaves are completely free of surface water when I put them in there, they dry out before they would mold. The brown paper bag keeps the leaves from turning brown from exposure to light, and provides a nifty way to reuse those wine bags!
Harvesting and Drying Herbs
usually i freeze herbs also. wash 'em up -- as in the basil - pick off the leaves, or better yet - make pesto. the italian parsley - i usually coursely chop and stick it into pint size containers and i can usually shake out or pry out what i need. thyme, i usually freeze whole stems (cleaned of course) and frozen - use those in stews, soups..... tarragon, you could probably chop and freeze as well.
i'm not a big dried herb user....
Harvesting and Drying Herbs
Even though I have a dehydrater I generally freeze herbs for the winter. I figure I might as well have as fresh a flavor as possible.
You could wash one of the window screens you no longer need to have in the windows, and then prop it up between chairs, or on a table between books, so the herbs get air circulation from below as well as above.
Alton Brown made an arrangement with furnace filters, tied together and attached to a window fan so there was air blowing through. He never said anything about filter material though, and I'd be a little leery of this. At least make sure you're using cellulose filters. But I don't see why you couldn't do the same thing with sandwiches of window screens.
The microwave is very tricky. I think you'd be cooking the herbs before they dried. The lower the temperature you can dry the herbs at, the fresher the flavor will be.

Let's just say I WAS a giddy school girl...haha.

It's 9:30 and I'm still at work so I'm sad to report I hit up fast food. But let me tell you about last night's dinner, because it was awesome! I mandolined up a big zucchini from my garden and some new potatoes for some squash gratin. I also had two chicken thighs that didn't fit in the pan for the weekend's arroz con pollo, so I cooked them up with a honey-lemon sauce and browned them under the broiler. It was great!!!

We're going to have the rest of the Piedmontese short ribs braised in beer with (as the farmer calls them) adolescent onions. Fingerling potatoes roasted in olive oil and thyme. And shredded cabbage, red & green, with carrots in a vinaigrette.
We'll lift our glasses to GatorPam and the other missing voices.

@bananamonkey - thanks for the shout out, i'm tickled.
(jealous of your malted milk shakes!)
@italiancupcake: no recipe persay, but it's really super easy.
for the miso broth i just add a cup of really hot water to a tablespoon of white miso paste (you can find tubs of it at whole foods) and let broth come together. slice up two leeks and 8 ounces of shitakes and sautee these in butter & olive oil (sometimes i add a little garlic) until leeks soften and mushrooms begin to brown. reserve these and juices in a separate bowl. wipe out your pan and then coat with olive oil for searing the cod (i did 2, 6 ounce fillets tonight). start with skin side up and sear for 3 - 5 minutes on medium high. flip the fillets so that the skin side is down, then return the leeks, mushrooms, and miso broth into the pan and cover. simmer on medium-low until the fish just starts to break apart. you can add more water, if you would like more "sauce" with your final dish. i also sometimes throw in a tablespoon of butter at the end, to round out the flavors.
the whole thing usually comes together in about 15 - 20 minutes, including prep and cooking, which is perfect for a busy night.

@pooroldmama -- please explain raw apple cake?
As for all of you whose plans were changed? The Bub and I were derailed--no honey curry chicken--that sits in the fridge. We got completely distracted by hotdogs, french fries and chocolate malted milk shakes at a burger stand not far from the house. This place was fantastic--and we found it two days before they close for the season! Prob best for our waistlines that we haven't discovered it sooner.

Tonight it was pan fried chicken breasts an spaghetti.
Yummy

I was going to go with a simple breakfast-for-dinner kind of thing, but then I spotted some flour toritllas in my refrigerator. I'm now going to make breakfast burritos with eggs, cheese, chopped up ham, and potatoes, and adds loads of freshly made salsa. I'm excited. It's wrong to be this excited about dinner.
@BananaMonkey: It was really nice of you to bring back this thread. I hope your attempt at luring Pam back works, she seemed lovely.

I'm ditching the meatloaf plans 'cuz it got too warm out, so went to the store to get the ingredients to make the Asian Beef Salad on Amanda Hesser's Food52 site. (So excited to be using lemongrass for the 1st time!)
That, and some mojitos (got extra simple syrup in the fridge!).
