Suggestions for vegetarian weeknight dinners?

My husband is a vegetarian so we are mostly a no meat house. My favorite cookbooks for easy veggie recipes are by Jeanne Lemlin. I just had some veggie enchiladas for lunch from one of her books. Some other great recipes include tortellinis with broccoli, walnuts and olives, black bean chili, fettucine margarita and many others. Another great thing to have on hand is homemade refried beans. I make 2lbs of black beans and refry them all. Freeze them up in smaller containers and you can make huevos rancheros, quesidillas with beans and roasted veggies or just have them on the side to round out a meal. My all time favorite veggie meal was found years ago on the back of a Muller's elbow macaroni box. Very cheap, easy and a crowd pleaser.

Arizona skillet dinner

2 cloves garlic minced
2 tbs chili powder
one onion chopped
one green pepper chopped
one 28 oz. can tomatoes mushed in bowl with juice
one can kidney beans, drained and rinsed
2 cups of corn
1/2 lb elbow macaroni

Saute garlic and onion with chili powder. Add green pepper and cook a few minutes more. Add mushed tomatoes, kidney beans, and corn and simmer for 15 minutes. In the meantime, cook elbows. Add elbows to veggie mixture. Serve topped with monterey jack cheese. Your favorite homemade corn muffins make it a meal.

Homemade pretzels

I haven't made them in years but when my kids were little, making pretzels was my go to activity in the middle of the winter when the weather was terrible and there was nothing else to do. We would make eyeglasses, their initials and whatever else they could think of. Kept them busy for an hour or two and then they had something good to eat.

Baked Beans: HIT ME WITH YOUR BEST SHOT

Here's my favorite recipe. It cooks for 12 hours in the oven but I do not use the plastic wrap and double the onions. Always a hit at any potluck I attend.

Cooking with duck fat

I've never cooked with duck fat, and since my husband is a vegetarian, I probably never will but there is a line in the Zuni Cafe Cookbook (p 169) that always cracks me up. In a recipe for La Garbure Landaise (a soup), the description starts out with "According to Pepette, my lodestar for all things involving duck fat". Maybe Pepette will chime in...

Please, tell us where you're from...

I live in Cobleskill, NY. Beautiful place but few restaurants, except for fast food, pizza, pizza and then again, there's always pizza. The fact that my husband is a vegetarian further limits our options. Albany is 45 minutes away and is where I work so we do eat out there when we can. The greatest part of where I live are the farm stands, cheap and gorgeous produce. I wish I could take all of August and September off to cook. Those of you in the area, visit the Schoharie Valley, the breadbasket of the Revolution and beautiful scenery.

Kitchen Design

For me, the kitchen has to be a pleasant place to be to fully enjoy cooking. While my house was being renovated, the kitchen was in the basement, very dark and dreary with no windows. It was functional but not a pleasant atmosphere. My new kitchen isn't huge but has lots of windows and light and is open to the living room. The only thing I hate about it is my cooktop, a gas Jenn-Air with the exhaust fan in the middle. Of course, you turn the fan on and the flames blow to the side creating uneven heat. Duh, what was I thinking!!

What's your favorite cake?

My go to cake is an orange almond cake. The recipe comes from a Jeanne Lemlin cookbook. No frosting, I just dust with confectioner's sugar using a doily or cake stencil. I get raves whenever I make it, and it's easy.
