I like to put fresh tarragon under the skin of the chicken before grilling or baking it.

What brand of salt for salt pig?

I got a salt pig for my birthday, and some pink australian salt from a local gourmet grocery store. The salt is fabulous, super crunchy with long pink chards. Very appealing and the best I have ever tasted. A big bag was only about $3 from the self-serve bin, even though it's $29.99 a pound, I guess this salt is lightweight.

Strange food phobias?

Ice. It gives me the creeps. Frozen mugs are the worst. I remember the old-timey metal ice trays with the pull-up handle release. Yikes, even as a kid. I don't like cold watermelon or fruit, either. My boyfriend many years ago used to get the chills when he would eat cereal and hold a paper towel at the same time. He said the nubs on the backside of the paper towel bothered him.

"Too much" cheese- 4 types in my fridge

quiche-a great use for extra cheeses and lunchmeats. when I was on a real budget, I would buy cheese and meat end cuts from the deli and make quiches from them. Cheap, tasty food. No two ever came out the same.

Buying Eggs From The Greenmarket

We have free-range chickens. From what I have read, the eggs can actually stay in the henhouse for up to two weeks before gathering. Of course I gather them every day, and I would say that, once they get washed and go in the fridge, they should stay in the fridge. For the price they charge for these type of eggs, I feel they should take the time to wash and refrigerate them.

flourless orange cake

I made the cake last night and it was fabulous, as was the ganache. The recipe was from allrecipes, and I would definitely make it again, maybe try lemon next time.

Fried Green Tomatoes Tonight

I never salt or soak the slices, and I make sure they're not sliced too thin. Then I simply dip in flour, then an egg/milk mixture, then cornmeal. Each one seasoned, of course. That gives a slightly thicker coating. I just use canola oil to fry. How about trying some panko crumbs as the last dip? They always seem to make things puffier.

Arepas Venezuelan vs. Colombian. Who wins?

Colombia and Venezuela used to be one country. The arepa is one and the same in both countries. Regionally, some people would fry them, some would bake them, some would cook them on an open fire. In both countries you will find a variety of arepas. In Venezuela, some people put bacon pieces in the dough. Arepas are a wonderful blank canvas. Fill them with whatever makes you happy and enjoy them.

Mixed Review: Arora Creations Gobi Cauliflower

I have tried this mix, too, and decided to use half. It was okay, a little overpowering, and musty tasting. I preferred my old way of fewer spices and a little more fresh stuff.

FRIED SALT PORK ---My dad, as a late night snack, would soak some slices of salt pork in water for a while, then dip them in a batter and deep fry them. Yum! Healthy, too, eh?
