Honeycomb tripe! I've had it broiled, boiled & in a bowl of menudo. My favorite recipe is the Trippa Alla Romana I found on epicurious.com. If I won Beyond Nose To Tail I would definetly be open to trying exciting and new types of "offal foods". Ha!
Oh! I get it now. You should have seen me pronouncing it all of these different ways aloud until I said-- "it". Ha!
I think this sounds pretty gross, myself. Why is the name so great? Maybe I'm pronouncing it wrong in my head?
My oldest daughter does the carving at my house. She cuts a little notch on the pumpkin lid top so that I know which way it'll fit back when I take it off to light the candle at night. I hope this is a good tip!

I made this last night, and it was a huge success. It looked kind of watery until I put in the goat cheese (I put in all four ounces inside of reserving half for crumbling on top), and then it coalesced beautifully.

i just recently book marked a recipe for a pasta dish with a pumpkin puree sauce. this one didn't include a goat cheese topping, but i think i'm going to have to do that because it sounds like the perfect addition
