Honeycomb tripe! I've had it broiled, boiled & in a bowl of menudo. My favorite recipe is the Trippa Alla Romana I found on epicurious.com. If I won Beyond Nose To Tail I would definetly be open to trying exciting and new types of "offal foods". Ha!

How to Carve a Pumpkin

My oldest daughter does the carving at my house. She cuts a little notch on the pumpkin lid top so that I know which way it'll fit back when I take it off to light the candle at night. I hope this is a good tip!

I made this last night, and it was a huge success. It looked kind of watery until I put in the goat cheese (I put in all four ounces inside of reserving half for crumbling on top), and then it coalesced beautifully.
