Anyone watching the Batali/Paltrow show on PBS?

We wanted to like this show but we had one big problem. The monotone voice over telling the viewers what was happening all the time. It was very annoying and if the show was on radio might be fine but we could see what was going on.

Best Bratwurst?

I lived my first 29 years about 5 miles from The Brat Stop and they are indeed an excellent brat. Obviously Wisconsin is all about brats.

Best Bratwurst?

Johnsonville is the brat benchmark. Louie's Finer meats in Cumberland Wi. has a vast array of brats in many flavors. It is also the mecca for meat. Once you go there you will be hooked.

We Talk to Bobby Flay About Bobby's Burger Palace

Yeah I'm a douche bag that orders a burger the way I want it. If it's over cooked I send it back and probably never order a burger there again.

A change of heart concerning Sandra Lee.

Don't like the way Sandra Lee comes across on TV and her recipes are a joke. When she appears on the screen we change the channel as quick as possible. It's just that easy.

Yellow food

What can be more yellow than mustard? Goes great with pretzels.

Serious Sandwiches: Hot Doug’s Citrus Burgundy Pork Sausage

Hot Doug's is an excellent reason to visit Chicago. We live in St Paul so it's about an hour flight. We go to Chicago for 2 reasons: Frontera Grill and Hot Doug's. Both places are very comfortable and remarkably reasonable for the atmosphere and food. Doug seems like a neat guy and the staff at Frontera make you feel like you are a regular.

No Knead bread call to arms.

Don't try to form it into a ball just kind of pour and scrap it into your dutch oven. It will form itself pretty much. I've made this bread about twenty times now with great results. Have made versions with dried basil, dried rosemary, and even with chili powder which turned out a nice lite orange color.

Anyone watching the Batali/Paltrow show on PBS?

Batali lived in Spain when he was in college. He lived with a Spanish family. Gwyneth doesn't eat anything with 4 legs. Those are her words.

Batali and Bittman have been friends for awhile. He was part of Bittman's Best Recipes in the World tv series. I love the show and record it on DVR every weekend and then I watch it - a day or so later - when everyone is gone from the house. It is one of my guilty pleasures.

I almost passed out when I saw that Empanada Gallego on the Galicia show. Mmmm...that looked amazingly good. I want to make that. I can't wait to buy the companion book.

The show is like Ryan Seacest and Britney Spears on the road together. The egos out way the information.

What do YOU do with apples?

I went apple picking recently, and I promised recipes for what I create with my excess. Here's the first!

I live right near an orchard, and I simply cannot resist a $10 bushel of No. 2 grades. My favorites:
Fresh Apple cake (with or without frosting)
Dried Apple Cake
Apple Date Cake
Apple pancakes - make regular batter, add a little cinnamon to it, pour into pancakes on the griddle, then arrange sliced apples into a little design on top. Be sure to have a well-greased griddle when you flip over. Serve with syrup- it's like pancakes and fried apples all in one!
Fried apples (cinnamon, sugar, and butter. No brown sugar)
Apple Strudel
I can't believe no one has mentioned Apple Turnovers! - Use layers of phyllo, puff pastry, or my personal favorite, homemade pie crust
Caramel Apples
Apple Fritters
Cream Cheese-Apple Danish
Apple-Sage stuffing in Turkey or Chicken
Canned Apple Pie Filling- Much easier to control sugar content that way
Apple Pie Variations-Crumb Topped Apple Pie
Deep Dish Apple Pie
Cranberry Apple Pie
That's all I can think of. Good luck!

I love the retro Waldorf salad and also add them to tuna salad:: Drain tuna in water and combine with mayonnaise, finely chopped, peeled apples and poppyseeds to taste. Use for sandwich filling or serve as tuna salad on a bed of greens of choice.

RAW poultry and he choked it down just to stroke the chef? serves him right he got sick. I'll spit out bad food back on the plate at the table, pay for my wine, no tip and leave. BAD food is BAD food and no sauce can cover it up either, too much salt also is an all too common violation. And a weak show is a weak show only Rooney could save this one he has a personality. Take a cue, Hollywood personalities are nothing outside their pretend scripted world, they can't even make a decent movie anymore!

The very best FN food-on-the-road food shows have been those done by Alton Brown..."Feasting on Asphalt" and now just concluded "Feasting on Waves." The Caribbean one was fantastic, the food and locales exotic though hardly top drawer. Real people feeding real people eating regional goodies. Fantastic. As for "On the Road," all of the principals are overrated, though I agree with whoever said there were things to be learned from "Molto Mario."

What do YOU do with apples?

Spiced apple butter (cinnamon and cloves). Apple jelly. Apple breakfast bread (See King Arthur's website). For once, our little apple trees have produced and I have lots. I am even using honeycrisp (developed here in Door County, Wisconsin) for apple jelly.

Red cabbage, apples, wine vinegar, brown sugar, cook until soft, serve with ANYTHING! Always have this as a side dish at Christmas

Baked apples are big in my family. A sweet or sweetish apple works without any sugar or honey added; we core, stuff the core with raisins (or other dried fruit, chopped to raisin size if necessary), dust with cinnamon and other pie-like spices, and bake. Put a little water in the dish to get them started, and baste with the apple juices. We don't peel the apples; some people peel the top, or just make a line so the skin splits more evenly. I guess my family is into rustic.

If you want something richer, add some cream, whipped cream, vanilla yoghurt, or ice-cream when serving. The nice thing is that you can eat these any time of day.

You can add a bit of sugar or drizzle of honey if you think the apple needs it, but the right kind of apple needs no additional sweetness when baked.
