Help for a picky vegetarian?!

I just made a big batch of burritos for the freezer. No real recipe, but here's what I did...
I used two cans of black beans and added some salsa and cumin, sauteed all that until warmed through. Take that off the heat and add two cooked chopped sweet potatoes. I added enough brown rice until I had the proportions that I liked. Fill burritos with mix, add some cheese if you'd like and wrap individually.
I keep a bag at work and a bag at home.

Other veg-friendly go-to ideas at my place: Lentil soup, black rice and beans, roasted veggie and goat cheese sandwiches.

I'll add my vote for the make your own frozen burrito idea. I'm eating one right now...it's so nice to have something in the freezer ready to snack on. I also like that I can put in it whatever I like! Most of the ones available in supermarkets taste odd to me, but I add what I want and leave out what I don't.

What does a young foodie/recent grad need in his kitchen?

I'll be totally unoriginal and add my votes for a chef's knife and a cast iron skillet. I also really love my Lodge Enamel Cast Iron dutch oven. I use it constantly. It does take up a bit of room, though. I leave it on my stove top all the time...it's red and looks pretty!

(Kitchen) Table for One?

I look for recipes that freeze or re-heat well. I sometimes half recipes, but not too often. Many times I make things that are easy to cook as single-servings...stirfry, eggs, pasta. I'll buy ingredients for things like that and then mix and match. Veggies for stirfry go into an fritatta, or get eaten raw with some hummus.
More often than not, I have dinners that may be considered strange to people who have a whole family to cook for...cheese and crackers and some fruit, popcorn, dried fruit and some nuts. I'll snack on multiple things throught the evening. I'm a grazer!

I NEED your menu suggestions!

I love love love to grill up some veggies (marinate them a bit), then spread those out on a serving dish next to some bread, goat cheese and dressing. If the meat lovers must have meat, perhaps grill up some skirt steak and slice it for them for sandwiches as well. Grilled steak sandwich with grilled peppers and onions? Yum. Grilled veggies on some nice crusty bread with a schmear of goat cheese? Yum.

Toasted Almond if it was the Good Humor truck. Sometimes Mr. Softee would be in the neighborhood, too. He didn't have Toasted Almonds, so I would get a soft-serve chocolate with chocolate sprinkles.

broccoli rabe: way or no way?

Yay yay yay for me. Lately it's been on a sandwich with grilled chicken on Italian bread, but I also love it over pasta. Lots of garlic and good olive oil and it's wonderful.

Favorite Camping Food / Recipes ?

We go car camping a few times every summer. It's usually just two of us, so I try and keep things simple.

A corn/black bean/tomato salad: I make this at home before we leave and keep it in the cooler for a quick side dish or snack.

Kielbasa on the grill: I think these are so much more tasty than regular hot dogs. I always make extra for breakfast the next morning.

Potatoes on the coals: If I'm feeling fancy (or, if I think of it), I'll bring toppings.

For lunch, we usually do PB&J...packs easily if we're going for a hike.

Breakfast is usually eggs and a hash I make from the leftover kiebasa and potatoes. I like to add onions too. The fresh get a little stinky in the garbage at the campsite, I've been known to use dehydrated ones for this. We'll sometimes bring pancake mix and take leftover syrup packets from restaurants that I horde once camping season is upon us.

Snacks are usually junk food. I try to stay away from that stuff at home, so it's a special treat for camping.

What to do for dinner...

Depending on the seasoning of the sausage, I would either go with the butter and sage sauce or I would keep it even more simple by cooking up the sausage in a skillet and then adding the cooked gnocchi to crisp them up a bit in the fat from the sausage.
I love to get some color on my gnocchi by crisping them up in butter...but if you have that yummy sausage fat, I'd use that instead.

What's been your most sucessful office treat?

Chocolate ship cookies are always a hit here, as are quick breads...banana, pumpkin and apple. I once brought in some left over made from a mix brownies and people went NUTS for them. I bet homemade ones would be even more popular.
Lemon squares met with mixed reviews, as did biscotti.

the GOOD HUMOR ICE CREAM truck!

The Good Humor truck NEVER came to our street when I was a kid. We only saw them at the little league park. So it was always associated with late spring/early summer, and never really around during the dog days when you really needed it.
Fast forward to me moving home after college. My old neighborhood suddenly was made up of families with small children, and must have seemed like a good location, because on my first day back, I hear the bells of the Good Humor truck. I ran like a madwoman down the stairs and out the door to the ice cream truck. That went on for the entire summer, and I always beat the little kids to truck...my legs were longer, and they were always slow in deciding what they wanted to order. Not me, a Toasted Almond, every time.

I'll second the rec for the Food Lover's Companion. I find it to be a very valuable reference book for ingredients and conversions.

I grew up cooking out of Betty Crocker, and I still refer to it often. But far and away, my go to book these days is How to Cook Everything. I love the fact that it has all kinds of variations on basic recipes, and sometimes a search for one thing leads to an even more exciting variation.
One of my other favorites is Everyday Food: Great Food Fast from Martha Stewart. The seasonal setup and wonderful pictures are particularly inspiring and the ingredients lists are usually things I have onhand.

Goulash?

Growing up (in the 'burbs of NYC) my mom made something she called "slop." It was ground beef mixed with onions, green peppers and diced tomatoes then mixed with egg noodles. More than a few friends call it goulash when I describe it to them, but to us it was always slop. She still makes it to this day and it's one of my favorite comfort foods.
