I have the Walsh and Bayless book...planning on getting the kennedy book next. Definitely agree that the Walsh book is good - haven't had a chance to use the Bayless book yet.

I would start with The Essential Cuisines of Mexico (or the original Cuisines of Mexico) by Diana Kennedy and Authentic Mexican by Rick Bayless.

I know this comment is much later than the ones posted here, but it is relevant and sorry but I'm new here.
I too am searching for an "authentic" Mexican Cookbook, but I have somewhat of a problem with the suggestion of Rick Bayless, Dianne Kennedy, or any other "chef". Although these people are very good at what they do and create some very tasty dishes, they're not "authentic". They were not born and raised in Mexico cooking mexican food from the time they were old enough to see over the top of a stove. I'm from Texas and have eaten the cooking of people I worked with that were Mexican. I'm looking for recipes that have been handed down for at least a hundred years (authentic), from great grandmother to grandmother to mother to daughter. For instance, if I wanted to cook a mexican soup of some kind, I would have to go pick some tomatoes, skin them, scald them, peel them and then make a stock to start creating my soup, or to stew my tomatoes. This is what I think of when I say "Authentic".

Used to be Clover Club potato chips -- does anyone else remember the commercial where the Clover Club Lady talks about hand-filling the chip bags? Actually, I hated that commercial, but loved the chips!

Generally available: Utz wins. Plain is good but I also like their honey barbecue.
When I travel to central PA I usually load up the car. There are tons of, um, "microchipperies" (is that a word?) there. Many are cooked in lard which gives a unique texture and flavor. Gibbles, Goods, Kay and Ray's, someone already mentioned dieffenbach's.
Kay and Ray's has a Dark chips. Not burnt. Really tasty.

Any flavor Zapps, most brands of Vinegar and Salt flavored chips (bonus points if they make me cough or catch my breath when I smell the bag) and, I don't know if any of you might consider them chips, but in Louisiana, fresh cracklings are KING. I love eating them like chips. As for tortilla chips, I make my own and you can't beat that.

Pop into Trader Joe's and pick up a bag of their blue chips. You'll be licking your fingers and stabbing at the bottom of the bag until every last crumb is gone!

All time favorite: Old Dutch Sour Cream & Onion.
Otherwise, I like Old Dutch Kettle Chips...either salt & vinegar or jalapeño & chedder..Old Dutch Dill Pickle (which is basically salt & vinegar chips with dill...you love'em or hate'em) and for pure experimentation, Archer Farms (Target Brand) has some very good "gourmet flavors"

I also love Terra Red Bliss Olive Oil, Roasted Garlic & Parmesan Potato Chips but I don't buy them very often becuase I'm likely to eat the entire bag.

If you get a box lunch at Honey Baked Ham, they offer a great chip--Cape Cod--I think. For dipping, Ruffels is a plus. And for every day snacking or go with anything and everything chip, you cant beat good ol' greasy Jay's. Lays-- any kind runs a close second 'tho.

I know that Kettle makes "Balsamic Vinegar & Sea Salt" Chips", but there's an organic brand at my store...DOH! can't remember the name, but they are pretty fantastic.
I also remember the first time I ever ate Cape Cod chips, they are dang yummy too...

Um, in college, I ate a LOT of Chili Cheese Fritos. Very tasty, but very hard on the waistline AND heart. Don't mock me. I know they're not "potato" chips, but jeez.

Kettle Chips' Roasted Red Pepper and Goat Cheese... Oh my lord! It's everything you'd ever want in a chip!

Salt & Pepper Yukon Gold Terra Chips taste just like a good baked potato to me... on the less fancy side, I go for Utz Cheddar and Sour Cream or the their wavy chips, plain; Bachman's Golden Ridges, from New England, are also great. Barbara's Yogurt and Green Onion. Zapp's dill chips. When I need a very small fix, though, a 1/2-oz bag of Utz plain chips are just fine.
In Canada, I like Lay's Ketchup chips (even though the color reminds me of dried blood) - Herr's in the US makes ketchup flavor, too, but they're not quite as good.

I like Zapp's Cajun Crawtators, and
Kettle's Sea Salt and Vinegar for flavor, but I'll take a bag of Cape Cod originals for crunch anyday.

Tim's Cascade Style Alder Smoked chips - apparently they're only available in the northwest these days. I'm also quite fond of Kettle Chips Chipotle Chili Barbeque, but I think this flavor may have been discontinued.
