Eating for Two: Peanut Butter Cookies

I'm pregnant with our first and I eat peanut butter every day. I'm vegetarian and tell myself that I can't feel guilty about a great protein source.

I have been skeptical about this study since I first heard about it. Since when does eating nuts cause asthma? Out mothers ate nuts when they were pregnant and my generation doesn't have the rate of asthma like the generation today.

I guess it is easier and more convenient to forget other factors that are obviously linked. Never mind all of the chemicals we introduce into our homes, the artificial foods we eat, and the general lack of exercise and activity we're giving our children.

Oh no. Peanut butter is the bad guy.

I'm convinced that most people would be surprised at how much weight they would drop JUST by adjusting their portion sizes. I used a calorie counting website when I started eating healthier; that aspect was a real eye-opener for me.

I have read about people actually asking the waiter to immediately put half of the meal in a take-home box... I've never gone this far myself but I do end up taking at least half home with me.

I'm with simon though ... no way do I believe that toxins from the plastic are not getting in the cheese but then, I don't eat cheese slices in the first place.

My husband recently roasted a chicken and boiled off the bits for a chicken stock. He put the broth in a big plastic bowl with a lid and was moving it to the refrigerator so he could make soup with it the next day. I don't know whether the lid popped off or he banged it on the way in but I heard a large splash, a 'damnit!', and got up to find chicken stock all through the fridge and on the floor. At 10:30 pm.

I'm still finding bits of chicken stock in my fridge.

I have lost 10 lbs in the last month and simply by counting calories. My body needs a certain amount of calories to live. It doesn't matter how many calories I eat, if I burn more calories than that during the day, I am going to lose weight. It's as simple as that.

I am, of course, trying to be healthy and get the right mix of fat, protein, and carbs in my diet too but the real lesson here? Portion control. Calorie counting over the last month has taught me portion control. I was sometimes eating three times what would be considered a serving.

I didn't pay money to join a program, I'm not eating shakes for lunch, I'm not hungry all the time, and my food doesn't have points.

Is Cheese Vegetarian?

I agree with a couple of the previous posters in that, it really depends on why the person decided to stop eating meat in the first place.

I have been a lacto-ovo vegetarian for almost 14 years. My decision was due to the fact that I didn't like most meats, coupled with all of the "it's healthier" messages I was reading in magazines. Obviously I would rather eat a cheese without animal rennet but I'm not going to be crazy about it. I just don't like eating the meat.

I think the first recipe I made with it was Foccaccia bread. My mother-in-law bought me the Mixer Bible. It is great and has a couple of really nice foccaccia recipes in it. And yeah ... gotta love the kneading hook.

Being a peanut butter fanatic and a huge peanut butter cookie fan, I grabbed this recipe and went to work. My judging audience are the members of my Wednesday night "Pastry Meeting", and their reviews were mixed and surprising. Some that DON"T like peanut butter cookies LIKED these a lot, and others who preferred my version "without" the chewy aspect gave these a thumbs down. I myself had mixed emotions, but did enjoy the cookies. Thanks for a different take on a great classic.

Why go to all that trouble? IMHO, the best pb cookie recipe in the universe is this one that you can stir up in about 5 seconds!
Easiest Bestest PB Cookies
1 cup peanut butter
1 cup sugar
1 egg
pinch baking soda
splash vanilla
Mix well until nice and smooth. Scoop cookies with small scoop and place on cookie sheet lined with parchment or sprayed with nonstick spray. Bake at 350 degrees for 6-10 minutes until golden brown. Cool until they don't burn your tongue and serve with a lovely glass of cold milk. Pure heaven.

What about seeds? I'm assuming for those interested in getting a vegetable source of protein that seeds, like pumpkin or sunflower, would be okay. If nothing else, it may prove a helpful substitute between peanut or tree nut binges. And since they've started selling sunflower seed butter at my local grocery store, it seems to be becoming more commonplace.

if you want to make it decadent, smoosh a mini reeses peanut butter cup in the middle of each cookie before putting them in the oven. i brought some in to work recently and my coworkers went bonkers over them.

but that added peanut butter cup makes this fall even more on the vice side. heh.

In fact, on more than one occasion I've said to my wife, everyone at the table should be allowed to ask for another serving of their favorite course. I prefer the large portions because extra meals make the high price for the meal more worth it on my budget. I can justify the price when I know I'll get at least 2 meals and won't have to cook. I never have a problem reheating or reworking the ingredients into another tasty meal. The hardest part is resisting the urge to eat my leftovers as a bedtime snack.

I have to agree that portion sizes really are out f line with reality. and btw Ed congrats!!! you really are doing amazingly well! Ha anyone ever had the problem of asking for a to go box and the wat person refusing, I've had this happen and their justification was I had barely touched my food, so I must not like it so why should they "waste" a to go box when I'd probablyjust dump it. Needless to say I have never gone back there. Actually I loved the food too, but because of health issues my intake is much less than most.

I don't know if most restaurants that people eat at on a day-to-day basis would be willing to serve small plates this way. It's rare to see places that even offer half portions. I'd go for it, though! Eating half or selectively is another good tactic, boxing up a portion of your meal as soon as it hits the table so you're not tempted to eat everything on your plate.

Many people have been focusing on eating half, but another tactic that can be useful with hugely-portioned meals is to change the components of the dish you eat most of. For example, as a vegetarian, my only option is often pasta with marinara or something similar. I'll eat some of the pasta, usually less than half, and virtually all the vegetable sauce. Then I'll take home the leftover pasta and either resauce it or incorporate it in a pasta frittata. Anyway, my point is, almost any calorie-dense ingredient can be stretched out further than any relatively low-calorie ingredient. And doing so makes for more healthy meals.

I have an acquaintance in Manhattan who almost never cooks and eats out in restaurants regularly yet manages to keep the weight off and still have frozen meals in the freezer to thaw and heat up for those times when she doesn't want to go out. Her secret? When dining out she religiously - no matter what the item and what size the portion is - cuts her entree and side dish in half when it arrives at the table. The leftover 50% gets wrapped and taken home then straight into the freezer in appropriate packaging.

I think a restaurant that offered the option of being served a portion 1/2 the size for 1/3 less $$ would find it to be a successful program.

Congratulations on your diet. This is one of, if not my biggest issue with American restaurant dining. I love to eat but have to watch my weight and portion sizes are way too big. I live in Chicago where at most not all, they are ridiculous. I try to share an entree, or get 2 appetizers but I also love food so will eat more than I should if it is on the plate. Most of the time a main protein dish can be divided into 2 and sometimes 3. I actually like eating at some of our higher end Chicago restaurants just because they will do tasting portions. I wish other places wold catch on!
