Cook the Book: Lidia's Italy
To impress, I try to keep things simple so that i keep my wits. An example would be a protein that I think Mark Bittman published in the New York Times. The key is to sear pieces of salmon two minutes per side, then set them on a baking sheet. Then mix equal portions of dry Coleman's mustard, water and sugar together (you can go a bit lighter on the water to make it less runny). Then slather the fish with the glaze and bake at 250 for 20 minutes. Pair the fish with sauteed green beans or broccoli with garlic. Then I cork some white wine and enjoy an impressive, yet simply delicious and easy, meal for company.
By the way, I love Lidia's PBS show. Would love the chance to try her recipes.
