Can we get tips on crispy risotto cakes?

My mom was a weird cook. in the 70s and 80s, she was anti-sugar/refined flour/salt. Every bread and pasta was whole wheat - the first box-mix-pancakes I had made me vomit and I was about 10. I visited mom recently and she pulled her favorite dish out - pull out whatever is in the fridge, whether restaurant leftovers, meat or veg, cut it up and heat it in a skillet. Serve with rice. Mac n cheese was boiled whole wheat noodles with (usually colby or cheddar) cheese cut up very small and mixed in, put in the oven til the cheese melted, then covered with wheat germ. :( We had a lot a lot of vegetables - garden and canned and frozen - and salad is probably her best dish. I still love a salad with all sorts of stuff in it. The worst part was the brewers yeast and wheat germ that she put on EVERYTHING. Dad loved making soups and I bet they would have been really good if mom had let him put a little salt in them.

My dad always made the sausage-bread-herb stuffing, usually with apples, and I love it. My husband's uncle is above-average in the kitchen and only makes oyster stuffing. I prefer the sausage stuffing and never thought the oyster stuffing was that different, it simply lacked flavor compared to the sausage stuffing. I wouldn't turn down oyster stuffing, but I'd pick sausage over it.
