Cleansing your palate after a rich meal: What do you do?
Some fresh fruit or a blended whiskey sour help to "settle the dust".
Favorite foods eaten at the 'wrong' temperatures?
Frozen Milkey Way candy bars, left over mac and cheese, canned baked beans from a just-opened can and, I'm ashamed to admit to this, but ravioli from a just-opened can.
Need ways to preserve green tomatoes
I make pickled green tomatoes, gosh, sorry to hear about your weather.
GREEN TOMATO DILL PICKLES (Kosher Style)
Green tomatoes
stalk celery
sweet green peppers
garlic
2 qts water
1 qt vinegar
1 C salt
Dill
Pack small firm green tomatoes into sterilized quart jars. Add to each jar a bud of garlic, 1 stalk of celery and 1 green pepper (cut into 1/4's). Make a brine of the water, vinegar and salt. Boil with the dill for 5 minutes. Pour the hot brine over the tomatoes to within 1/2 ich of top of the jar. Put on cap, screw band firmly tight. Process in boiling water bath for 15 minutes. They'll be ready for use in 4-6 wks. (This amount of brine fills about 6 quarts.)

I adore Black Pepper: but is it healthy?
I was taught that in an emergency, a small leak in your car's radiator could be plugged by adding 1 small can of black pepper to the radiator!?!?

Do you have a recipe you won't share?
I'll share most recipes when asked, EXCEPT my spaghetti sauce recipe which my godmother developed and asked me never to share. she's since passed away and I don't know anyone except one of her daughters who has her recipe.
The Best Thing I ever Ate ...
Sathome, never had halibut cheeks, but one of the best meals I ever had was COD cheeks at the River Lane Inn in Brown Deer, WI! Just thinking about them makes my mouth water...
Melon question
Ahhh, how foolish of me not to have realized that! :)
Melon question
Just out of curiosity, why cut the melon in half before refrigerating?
Copycat recipes...any luck??
I've had good luck with the KFC coleslaw recipe and have made it many times.
Smoker cookbooks?
Check out "The Art of Smoke Cooking" cookbook by Milly McDonald. We got our smoker about 10 yrs ago and I've used this book pretty often.
I still remember my first bite of ...
raw oysters (for me, its been an acquired taste)
my aunt's spaghetti sauce (o-m-g) it was sooooo good
strawberry pina colada :)
Got any suggestions for chicken giblets?
Bring to a boil, simmer over low heat 45-60 minutes and add to dog kibble. Bubba loves them!
Had the BEST Ice Cream Cone This Weekend...
There are quite a few favorite frozen custard places here in WI with awesome flavors and tastes, but probably my very favorite has to be rainbow icecream in a cookie cone from a long-since closed drug store in East Troy about 50 years ago! Just thinking about it now makes my mouth water.
What is your foolproof, fallback dessert?
Just made them this week - - cream puffs (with real whipped cream, of course).
Unseasonably warm weather food?
A blt and a slice of icy cold sweet watermelon - - come to think of it, I enjoy both during cold winter months too :)
Chicken Livers: Are yellowish ones OK?
I'd ask the butcher why they were yellow, but whether or not I'd try them would depend on his answer. Actually, I'd probably go to another store and purchase your usual brand of frozen livers.
What is your all time cookbook? Just one. What would it be?
The Settlement Cookbook, it has recipes for everything you ever wanted to make (and some things you never knew you wanted to make).
Sourdough Starter: Oh, Dear - Have I Killed Mongo?
opps, sorry, bubbamom here (again) fat fingers make the computer do funny things (including not letting me spell check).
Any way, as I was saying, add equal quantities of flour and warm water to fill the container again, leave it out overnight and store.
Yumm, think I'll have to make another starter (which I haven done in a
l o n g time). I can taste a piece toasted and slathered in butter as I type. ;)
Sourdough Starter: Oh, Dear - Have I Killed Mongo?
Poor Mongo...I just looked at my sourdough notes to refresh my memory and they note that when you start your starter, you cover with a piece of cloth or a paper towel (to keep out flies and the like. Then wait. If you catch some yeast (from the air, etc) the mixture will begin to bubble and foam. Stir it once in awhile and sniff it to see how sour it smells. And when it has a good, really strong aroma, use it, or cover the jar (still no metal, please) and store it in the refrigerator. My notes also indicate that when you mix your starter, that you mix the ingredients until blended (but not smooth), cover loosely and the mix will bwegin to bubble. Leave it for several days until it has a strong sour smell. It is normal for a clear yellow liquid to form on top, just stir it back in, once a day. If any other colors appear, you've attracted the wrong orgnisms, throw it all away, wscald the container, nd start over.
Starters improve with age, and once you have a really fine one going, it's a good idea to freeze some (just in case, it'll keep for about 6 months). Even in the refrigerator, starter remains very slightly active. Within a week or two, it will use up all its nutrients and sufficate on the CO2 gas it produces. To prevent this, if you don't use the starter for one week, stir it, pour out half (either give it or throw it away). Add equal
Serious Complaint: Chex Mix
I agree that I prefer to make Chex Mix in the oven and was lucky to have noticed the recipe switch on the boxes soon enough to have cut out a recipe from a box and keep it in my file. Perhaps it would make sense to contact the company with these concerns? It's obvious from the comments that people have issues with the packaging.
What Are Your Kitchen Nightmares?
It was Christmas Eve, 2007, and I was boiling up some chicken giblets for my spoiled rotten dog. I had turned down the heat to maintain a low simmer, covered the pot and set the timer. In the meanwhile, I noticed it was getting late and I needed to get ready to go to church. Well, you can guess where this story is going...With about 30 minutes left to Mass, it hit me like a ton of bricks - - I left the stove on. I rushed home to a house full of smoke and a dog panting at the rear door. The dog went outside, I quickly turned off the stove, opened all the windows, turned on the vent fan and the ceiling fans. The dog was fine (thankfully), after about 30 minutes, the house was cleared of smoke, although the odor was still pretty strong, and the pan with some unidentifiable lumps of black melted to the bottom was soaking in the sink and the batteries in the smoke detector were replaced.
As an aside, I was tempted to toss the pan, but it was calphalon and relatively new so I tried everything to save it including soaking, boiling with dishwasher soap, abrasive cleaners and scouring pads (remember, at this point, I had nothing to loose). After a day or so of stubborn cleaning, I was finally able to get the pot clean, the finish is fine and I'm still using it!
Sometimes You Feel Like a Nut, Sometimes You Don't?
Really like almonds (raw and roasted) pistachios, pecans (raw and roasted) walnuts (raw) and, my all time fav: macadamias (roasted). Enjoy nuts in salads (especially pecans and walnuts). And, if they count - - pumpkin seeds salted and roasted. The list just goes on...
Serious Efforts: Brewing the Perfect Pitcher of Iced Tea
wow, I've made lots of iced tea and never noticed a problem - - must be luck. Usually use Lipton tea, but have used other brands. Lately, I've been putting 4 bags in the CARAFE of my 12 cup coffee maker, fill it with tap water and turn it on. When it's done "brewing" I turn off the coffee maker, let it sit for about 3 minutes, remove the bags, cool a bit, pour into my pitcher (plastic, usually) and refrigerate. Hmmm. Gonna try Chowhound's method and see if I can taste a difference. I drink my tea unsweatened, but like a piece of lime (or lemon) in the glass added. Sometimes in summer I'll substitute one bag of "regular" tea for one of the fruit flavoured varities for a refreshing twist.
Bloody Mary Is the Girl I Love
V8 (and vodka, of course) and a dilly bean or a dill pickle, lemon-pepper, and worcestershire sauce. If I have access to "Duffy's Sauce" I eliminate the lemon-pepper and worcestershire. Gotta admit, never used horseraddish but aim to try that out this weekend - - or perhaps sooner :) It's pretty common around here (Wisconsin) to have a beer chaser too!
Simple Question: What did you have for dinner?
Oven baked pork chops and red cabbage and a few Christmas cookies for desert.
I adore Black Pepper: but is it healthy?
Nothing is wrong with black pepper...it's actually the capsacin in the cayenne or chili pepper that is supposed to help rev up your metabolism so if that is what you are trying to do then exchange the black for the red otherwise you and abuse pepper because it's all good for you!
I adore Black Pepper: but is it healthy?
Found a pretty sweet Pepper-blog today if anyone's interested called: Confessions of a Chilihead. Good research from what I've seen! AND I had to give her credit on my blog for it!
I adore Black Pepper: but is it healthy?
Minutia - I know it's not a nightshade, it's just something my nutritionist had mentioned. However, I've just done some research and, she's wrong!
Meanwhile, I haven't smoked in years....
I adore Black Pepper: but is it healthy?
The only negative health effects from peppercorns I have heard of are for people with certain health issues. There are people who are allergic to pepper. Pepper flakes can get stuck in the stomach lining or intestinal lining for people with diverticulitis and certain ulcers - but some ulcers and other infammation are treated with ground pepper or black pepper essential oil in homeopathy.
KateRuby, since black pepper is a NOT nightshade, unlike every other fruit called a "pepper", it should not aggravate people with autoimmune inflamation. #1 nightshade to cut out - tobacco - reduce inflammation and taste all of the flavors of your food.
I personally love a variety of peppercorns. I always have black, red, green, and white peppercorns on hand.
If you are a real pepper lover, try white pepper in a batch of Pfeffernüsse, Northern European cookies made with nuts and ground pepper.
I adore Black Pepper: but is it healthy?
"Daaamn, it smells like peppa up in heeere!"
Cleansing your palate after a rich meal: What do you do?
strong green tea!
Cleansing your palate after a rich meal: What do you do?
Soda water with lime works well also.
Cleansing your palate after a rich meal: What do you do?
If I'm in between courses, I go for anything citrus. If I don't have sorbet, I'll literary head to the refrigerator for a small swig of orange juice, which is almost always in the house.
After lunch I often have tea. After dinner I almost always have a small piece of chocolate or biscotti with espresso or coffee. Espresso with biscotti is certainly the best for me for "settling the dust", as bubbamom says.
Cleansing your palate after a rich meal: What do you do?
I like anything with lemon, lemon sorbet if I have it.
Cleansing your palate after a rich meal: What do you do?
Tea, usually mint or ginger. I figure I'm heading off any ill-effects of such a rich dinner.
Favorite foods eaten at the 'wrong' temperatures?
I LOVE eating canned vegetable soup straight from the tin. Somehow it just isn't as heavy, and tastes waaay better.
Frozen beans and peas are aways good. Pieces of raw potato are good too. Don't know if that counts as the wrong 'temperature' but I know it counts as yummy!
Grocery bagging violations
I live in the UK, where you bag your own groceries. We use our own heavy bags rather than disposable ones. Why not pack your own? It's not like you have crucial work to perform while being checked out.
Grocery bagging violations
Rubbed, perky and ready to grill!
Grocery bagging violations
But when are they getting their much-deserved rub down? And tell me you insured that your rub was environmentally friendly, containing no fragments of plastic bags. Nothing disgusts me more...
Grocery bagging violations
She IS a nut Katie...but she's got a nice rack...of ribs.
Favorite foods eaten at the 'wrong' temperatures?
Eating cold leftover spaghetti as I read this!
Favorite foods eaten at the 'wrong' temperatures?
Microwaved Marshmallows with a sprinkle of rock salt! Extravagance: add a bit of chocolate (S'mores-style) or a piece of a 3 Musketeers Bar, then zap! Melty, yumm...
Favorite foods eaten at the 'wrong' temperatures?
I love pulling meat out of the red sauce from fridge in the middle of the night and eating it cold with my hands - meatballs and especially sausage.
Favorite foods eaten at the 'wrong' temperatures?
On chilly mornings, my mom used to microwave orange juice, which we had to finish before we could leave for the bus stop. The metamorphosis made me gag.
These days I sometimes eat canned Indian food (Jyoti's Punjab Chhole—cue Homer Simpson-like "ohhhhh") at room temperature, right out of the can. And I eat yogurt out of the freezer. It's like nutritious popsicles without sticks.
Favorite foods eaten at the 'wrong' temperatures?
Cold sausage & cold sausage rolls. I love nothing better than a nice sandwich made with cut up cold sausage and fathers favourite sauce. Though finding a nice English style sausage and FF sauce now I'm living in Indiana is a bit of a stretch. I also love cold steak in sandwiches the next day. Oh face it any cold leftover meat in a sandwich is my idea of a great lunch.
Favorite foods eaten at the 'wrong' temperatures?
Frozen peas and frozen corn make a great snack! And frozen blueberries too. Pretty much anything small and frozen. My boyfriend thinks I'm strange...
