Arkansas: Stalking the Fried Dill Pickle

Though they do have them at Cheeseburger in Paradise, they are not very good. They don't use the right batter, so they come out gritty somehow. But here in GA, there are plenty of places serving them up--Fox Bros BBQ being my favorite so far, but I have heard good things about the ones at The Glenwood.

Your best gourmet burger recipe?

I make regular beef burgers, but the best seasoning is Krazy Salt. Mix that with 80/20 beef and cook to medium, on an onion roll with grain mustard and swiss, pepperjack, or medium cheddar, and it is so good. Ooh, also good is the grain mustard cheese they sell at my local farmer's market...I am making myself hungry.

Dinner: Impossible with Michael Symon?

I watch Dinner Impossible, and I am surprised at how many people here are commenting that Irvine can cook. From my observation, he does pretty ordinary things. I know he is under time restraints, but it usually isn't anything innovative. I think Symon may do a better job, and his personality seems to be better for watchable tv.

I have felt like that at work before. It is really hard to sell food on days like that!

Gordon Ramsay Is Not a Jerk; He Just Plays One on American TV

Part of the reason he is a dick on Hell's Kitchen is because of the caliber of contestants that appear on the show. I think the casting department tries to find people that won't be able to handle the situation they are put in. I watched last night, and the man eliminated was not a professional chef, but a stay at home dad. He had not worked in a kitchen, but thought that catering to his children gave him enough experience to work in a busy kitchen environment. Part of the reason for this casting is possibly because of the show's premise. The show is looking for a line cook. The contestants cook recipes that are handed to them. They have to do the same menu in every episode. The yelling of Ramsay is the only thing that could make the show interesting. So I do not think of Ramsay as a dick...I think he is a passionate man who knows how to keep a disappointing show more watchable.(Though I won't endorse his need to be shown without a shirt in every episode of Kitchen Nightmares.)

The Healthiest Chains in the U.S.

I was reading over this article of "healthy chains" and was surprised to find Ruby Tuesday included. The options the magazine "loves", like the veggie burger and turkey burger, have 52 or 45 grams of fat, with the veggie burger nearing a thousand calories. This information is off the Ruby Tuesday website, and does not include any side items. A Big Mac and a small order of fries has less calories and less fat than both of these "healthy options", with a caloric content of 790 and 42 total fat grams.

Gordon Ramsay Is Not a Jerk; He Just Plays One on American TV

How come the American talkshow hosts seem to enjoy being "funny" and talk all kind of nonsense and act stupid when they invite Ramsay over to their show? I just watched 2 different talkshows via SE and they were pretty unbearable - the hosts i mean. Gordon Ramsay was genuinely interested in the cooking and they weren't.

They've had them for years at Penguin Drive-in in Charlotte NC. They're served with a spiced mayo type of dip - very tasty.

I've been eating them all of my life! They were always on the Toot's menu in Murfreesboro, TN. Best ones in Orlando are at Jocakamo's New Orleans Kitchen!

Side note: I only like the chips. I've had the fried spears several times and they miss out on the crunch factor and tend to get soggy quickly.

Your best gourmet burger recipe?

We make burgers (and converts along the way) with 50/50 ground sirloin and ground chuck. Serve with dill relish or hamburger dill slices, toasted buns and our favorite homemade catsup. Easy, make ahead sauce that our friends love. You can find it here.

@wookie - To my way of thinking, "gourmet" is in the eye of the beholder! Plus, my husband would never let you get away with saying "just regular plain old" about his truly beloved! Bon appetit...

Dinner: Impossible with Michael Symon?

I really didn't care for Robert Irvine much at all. But I like Michael Symon. But I wonder how good he'll make the show.

I started watching Dinner Impossible about a month or two before the scandal. I just thought that so many of the episodes that I saw weren't very chef-like. Cooking at a school graduation with some cranky, insecure cook who has to give up his kitchen kind of turned me off.

Maybe Michael Symon will make the show better?????

Your best gourmet burger recipe?

@frederika--I have to confess that I bought ground sirloin to make the bulgogi burger of my dreams, but was so hungry by the time I made it home, that I slapped out two patties and grilled just regular plain old burgers seasoned only with s&p. Sorry, I feel like I've you down.

Maybe not gourmet, but good. I use turkey with kosher salt, pepper, parsley and butter:

I add water to the meat to keep it moist.

Enjoy!
