Tipping out the kitchen?

At my current job, we tip out 5% of food sales to the kitchen. It usually ends up being about 20% of my tips. I hate doing it, mostly because it adds up to about $100 a week, which I could really use. It doesn't bother me because I don't think they deserve it, but I wish the policy didn't exist.

The "tip line"

@cesnyc--at most places, you are in fact tipping the chef, just not directly. Where I work, we tip out 5% of food sales to the kitchen, which usually equals about 20% of my tips. Therefore, if I do $100 in to go food sales and no one tips me, I have to actually pay $5 for the "privilege" of labeling, preparing sauces, bagging, and fetching change.

Hannah, the same thing happened to me last week. A $75 tab and I was handed $80. I simply returned the change to the table and said thanks again, hoping they would think I just didn't hear when they said, "Keep the change." This worked fine for me, as I did not have to ask, did not have to be rude, and ended up with a more respectable $12 tip.

I don't think what you did was wrong, and I can't stomach reading all of these comments blasting you for being inappropriate. I have found it is better for my blood pressure to stay away from reading opinions of my job from others. We work in an industry that garners much discussion on the internet, both here and on countless other websites. I am sure that people that have no ties to the service industry would not want their work practices as severely scrutinized.

Is anyone here giving up a certain food for Lent?

I am not a religious person, and neither is anyone else I know that gives up something for Lent. The idea of giving up something for forty days is much more appealing than making a New Year's resolution, which I never do. This year I am giving up burgers, as well as all fast food. (Burgers will be most difficult, because the restaurant in which I work makes fabulous medium rare burgers covered in manchego...yum.) It will be a difficult forty days, but I plan on rewarding myself at Flip when my time is up, so it won't be all bad.

Once, as I was mixing together batter for a devil's food cake, I dropped the entire bowl onto the floor. Batter flew everywhere, covering my pants, my feet, the floor, the cabinets...some even made it to the ceiling. A disaster in itself, the kicker was when my dog came running into the kitchen. He tried to lick up the mess, so I went to grab him up...I slipped, of course, and ended up lying in the batter, dog held up in the air. It took hours to clean everything, including me and the dog.

Mayonnaise Is Second Most Popular 'Treat' For American Dieters

I don't eat mayo plain, and I don't think that is what this survey is implying. When I am dieting, I choose to have mayo on my turkey/tortilla rolls instead of having cheese and/or dessert. (I have low-fat Duke's mayo at home, which is not as good as regular mayo, but nowhere close to the grossness of Miracle Whip.) Sometimes I will just use Laughing Cow cheese on sandwiches instead of mayo or regular cheese. It helps the sandwich from being dry and gives the flavor of swiss, for fewer fat grams and calories than just a slice of cheese.

Five Guys' Fries Make Me Weep with Happiness, Burger Is Not Bad

Here is the problem with putting five guys up against a fast food burger...It isn't fast food. There is no drive-thru, they make everything fresh to order, and they are much more expensive. (Last time I was there, two burgers, one order of fries, and 2 sodas was $18.00.) That is why I would never compare Five Guys to fast food places-they aren't in the same category. So using that as a defense doesn't really hold up.

That said, I think Five Guys is decent, not great. The fries are seasoned nicely, but are more soggy than I would like. The burgers need the added condiments/toppings to make them stand out, when I would usually just get a tomato slice and cheese on an outstanding burger. I would rather go to The Vortex down the street than Five Guys.

Kitchen Nightmares

pjracz10, you don't get Fox? Wow. I didn't know such a basic cable plan existed! (BBC America I understand not having, but Fox?)

I enjoy the BBC version much more than the Fox version, because the BBC one has not only a more sensitive Ramsey, but they also do check backs at the end of each episode. I don't like that Fox revisits every restaurant in one finale episode.

The fries are wayyyy overrated! They must not cook them twice, or rinse them or soak them or neither. The fries are too starchy (and barely crisp) an end result. The burgers are very good though; bun has good density.
