Crispy, with thick cut I like it a little chewy as well.
Someone beat me to it, but I also like Mr. Mustard and swiss cheese on my ham sandwiches.
Grilling, on a Weber grill, with a nice bed of coals.
I like my bacon crisp, but with a little give to it. I usually buy from the local farmer's market so it's a thicker cut.
Turtle soup at Commander's Palace, the shot of sherry put it over the top.

salmon with a pecan-honey mustard topping... looks gorgeous, easy to make and people are usually surprised by it!
