What to do with the fryer oil?
i use a maxwell coffee can, and can the oil to the trash after the first use. problem is it's been so hot that fly's love the smell and I swear that my huge outside garbage can will fly away soon.

soft butter is not cool. prefer hard

Fall is my favorite season. To celebrate the coming of the harvest season a couple of years ago, my wife brought home a gallon of apple cider after work. I heated some up, and before I got a chance to take the first drink, she whipped out a bottle of scotch and poured a big slug into my cup.
She scored some serious points that night.

We make wassail (a variation on mulled wine) for our tree trimming party every year, and every year it is wiped out. Also love the hot mulled cider (sometimes spiked with rum, but mostly not), hot cocoa (of course), and Starbucks pumpkin latte.

Hot spiced chai! I had a tasty one last night from my fave local coffee joint. no starbux in my neck o' the woods! The husband refused to try it after he smelled it, and also refused to kiss me after I took a big slurp and waggled my tongue at him. Not sure if the smell of the chai or my probably less than inviting tongue waggling turned him off more!

Another vote here for hot spiced cider. I make it in my slow cooker and the smell alone warms me up ! I have made versions of a mulled cranberry drink that is amenable to adding alcohol for those who wish it.

JEP- here's an easy hot chocolate recipe to make from scratch.
unsweetened cocoa powder
sugar
vanilla extract
milk
The ratio for cocoa to sugar is about 1 : 1.5ish, and you want a little less than 2 tbsp of cocoa for one cup of hot chocolate.
Otherwise, blend together your cocoa and sugar in the bottom of a pan, and add just enough milk to make it into a thick paste. Turn on the heat to medium, and keep adding milk in small batches, stirring constantly, until the cocoa tastes as strong as you want it. Once it's hot, add vanilla extract or cinnamon to taste and serve.
Some key things to keep in mind are making sure the initial 'paste' you start with is fully blended, and so is every batch of milk you add in afterwards- keeps you from getting weird little cocoa lumps. Also make sure to stir constantly.

I have a completely different interpretation of the question than most others seem to have. When I think of "the masses" I think of my family (hubby and 3 teens). For us, an uninspired meal involves packaged spaghetti, jarred sauce, frozen meatballs, and bagged salad. Now that's TRULY uninspired!

Roasted chicken as well. I usually stuff it with onion, garlic, lemon quarters, rosemary and thyme, butter on the outside. Sometimes I make gravy from the drippings, and serve with a big salad and whatever side veggies I have on hand. The ultimate in comfort food that also never fails to impress!

I'm with LunaPierCook.....pork loin can be cooked in so many different ways...I always have a small roast in the freezer & can either cook it whole on the grill or cut it into chops & grill those in such a short period of time.

Pasta. I've always got good Parm in the fridge, so I just go from there with whatever we've got in. Sometimes in a tomatoey way, sometimes in a creamy way.

Depends on who the masses are. If they are vegetarian or semi-veg, a big pot of my rice and beans will do the trick. I also make a tasty baked ziti that people ask for seconds on when served.
A big brunch is always a winner -- loads of freshly made waffles, pancakes, etc. mmm.

Grilled pork loin, ribs, or pulled-pork BBQ sandwiches. Ah yes, there's something to be said for pork. :-)

Some people might wince at the thought of a quick pot of spaghetti sauce but I've almost always got in the pantry what it take to make a good, basic sauce and pasta to feed family and any drop-ins.

My Norwegian partner's mother's fish stew. Coley filets (or cod), which we always have in the freezer, tomatoes, leeks, lemon juice, thyme, garlic, salt, pepper. Served with boiled potatoes and soured cream.
It takes about half an hour to make, and it's real comfort food, and even people who are turned off by the idea of fish stew like it.

Another roasted chicken here. Prefer the parts the whole. I do it with bell pepper (red or orange), diced sweet potato, onion, garlic, fresh tarragon, and plenty of S+P.
A one pot wonder, and when using the foil roasting pans from the supermarket, they just get tossed when done. No clean-up!

I'll make a big pot of Texas Red chili when I need to feed a bunch of folks. It's easy to make and pretty inexpensive.
Do you leave your butter sit out at room temp?
When I worked in a bakery, they left tons of butter out of the fridge for days. I , personally, only leave it out for a recipe that calls for room temp butter, otherwise, I keep it cold.
