Schmaltz!!!
Schmaltz is delicious and anyone who would throw away a source of schmaltz is clearly a cretin. Probably one of those cretins who strip the skin from chicken breasts before cooking them. Probably one who eats "low-fat" chicken soup and pretends it's actual chicken soup.
(I can see tossing giblets, because a) there isn't much liver there and b) it's never going to be fresh. But chicken fat? Please!)
