How to Wrap and Store Cheese

Superb article! As a cheesemonger, I always advocate wrapping cheese in parchment or wax paper then in foil or plastic wrap. Sadly, most retailers (including mine) present their cheeses in plastic wrap or cryovac. This stems from a marketing viewpoint. Customers have an easier time picking cheeses when you can see the cheese. That and its so much more appealing and that (my bosses say) drive sales. The penance I pay to the cheese world for wrapping cheeses in plastic is to be sure it doesn't stay on the shelf for more than 5 days. Considering that I sell 1500 pounds of cheese a month, I hope it counts.

What Are the Must-Eats in Your City?

Tallahassee, Florida doesn't have much of a culinary scene. I take my family to Cabos, Dog Et Al and Bakin n Bacon when they're in town. The good news is only one of the diners is pretentious.

It was a bottle of muscadine wine found in an old barn. Probably a holdover from the Ford Administration. It was delicious, unexpected and probably more vinegar than wine. But it was great.

Dinner Tonight: Asparagus and Rice Soup with Pancetta and Black Pepper

I tried this last night and boy was it amazing. This dish truly changed my life as an individual and aspiring chef. However, I substituted picnic shoulder for pancetta and increased the rice by another quarter cup. The hickory twang to this dish was sweet!

Reminder: Stop Eating Thanksgiving Leftovers

Expiration dates are for the birds. I concocted turducken for Thanksgiving (at my friend's request and with her money). Tomorrow is turducken gumbo day! And I'm certain these opulent leftovers will be A-OK. I'm no researcher, but I feel confident that you can find a co-relation between allergies and current sanitation practices. C'mon, its common sense. YTMND FTW.

Ronco rotisserie??

Yeah, unlike the pocket fisherman or the veg-o-matic, The Showtime rotisserie works. Heat lamp + electric motor = surprisingly good stuff. The basket can be a pain. I do burgers in them and sometimes they'll slide around , scorching the sides.
