I add pureed zucchini or pureed cauliflower to my meat sauce. It is a great way to sneak in an extra veggie without altering the flavor too much. Weekend Book Giveaway: 'American Cheeses'
I used to visit with a farm woman of German ancestry near the small town of Fredericksburg, Texas. She had her own milk cows - 3 different breeds and a couple of milk goats. She always had hand churned butter and several different kinds of cheese. Now, I do not recall the different names of the cheeses but I can tell you that I could almost eat my weight in every variety. I would call her a couple of weeks before heading over there and place an order. I seldom ordered less than 10 pounds of butter and 20 pounds of the cheeses.

My fondest pork memory was when my best friend finally bit the bullet and told them to take this job and shove it -- she retired from teaching. At her party we had a whole pig roasted ala luau and all the trimmings and a DJ to keep us entertained. That was the best pork I have ever eaten!!! He did his lard proud!!! A good time was had by all! Doris, we salute you for a job well done - both in the classroom and as a party planner!!!

I am pretty much a ham purist. For a sandwich I like white bread with mayo or hearty rye bread with brown mustard. I don't want other flavors interfering with my ham. We are going to have Perfect Mashed Potatoes. I absolutely NEVER use anything but potatoes that I peel and cook myself! Easy italian here means also making fresh pasta in the time it takes to boil the pot of water. I use Jamie Oliver's friend Gennaro's method to make pasta in about 3 minutes - check out this podcast:

While the pasta rests 5-10 minutes before rolling and cutting, I pull out the food processor and mix 1 cup of toasted walnuts, 1/2 cup of fresh basil, a clove of garlic and olive oil (adding slowly, probably around 1/2 to 3/4 cup in total) until I get a decent pesto. I usually season it, adding salt and ground pepper.
Now the pesto's done, just quickly roll out the pasta, roll it up into a tight jelly roll and slice to the thickness you want...easy!
Boil the fresh pasta (takes far less time - watch it), top with sauce and freshly grated grana padano.
A very easy way to impress your date!

I like making a cold spaghetti salad in the summer. I use whatever I happen to have on hand at the moment. Cooked spaghetti mixed with some diced tomatoes, red onion, green pepper, black olives, etc. Add some EVOO and red wine vinegar with some garlic salt, pinch or two of sugar, some salad supreme and some parmesan cheese. Yum!

I've found that many stovetop risotto recipes can be adapted to make in the oven. For me, this turned risotto from being an occasional weeknight menu item to one that we make much more frequently. I'd say it's about 85-90% as good as stovetop in most instances, and is much tastier than a take-out alternative.
The last one I made I changed up by adding hickory smoked chicken apple sausage, and adjusting herbs and spices to compliment its sweeter flavors.
