My mother used to make a terrific chicken spaghetti. It was much different than traditional spaghetti with meat sauce. I asked for it not too long ago, but she had no idea what she had done with the recipe. I guess it is just as well, because it makes a huge roaster pan full. We'd being eating it until next Christmas. LOL

Cook the Book: 'Panini Express'

Hot pastrami that is shaved but piled high, seeded rye with spicy brown mustard on the inside and lightly buttered on the outside (I sometimes mix butter, parmesean cheese and garlic powder for the outside), Swiss cheeese (or cheese of choice or whatever is in the fridge), sauerkraut, and I sometimes add tomatoes. I used to make chicken and dumplings quite often. We had a friend who loved them, but his mother never cooked them because his father did not care for them. We invited him for dinner almost everytime I cooked them. After eating with us for a couple of years and eating til I thought he would pop, he arrived at our house one evening before I started cooking. He went to the kitchen with me so I could get started on the meal. Before I knew what was happening, he was questioning my cooking techniques and choice of ingredients and seasonings. I finally had to remind him that he had been eating my cooking for over two years and if he didn't like it he should cook his own! He never tried to tell me how to cook again, and ate with us on chicken 'n dumpling night for several years. Oh, he was not a freeloader - his paybacks were steaks dinners or barbecues. Mom rarely puts her heart into cooking. About twenty years ago, though, she prepared meat fondue -- that was great fun! And most memorable. Loved cooking my beef and chicken in the hot oil at the table. She also allowed all of us to make our own assortment of dipping sauces. My brother mixed grape jelly with godknowswhat. We all laughed. It's a shame we never had it again.

The most memorable meal was when I was sick as a kid- it was very simple- cinnamon toast and soup. As an adult it is the best comfort food.
