In college I would buy Pork Chops. Cheap and I could make just one. I got really really good at baking it just right. Juicy and cooked all the way. Side dish would be green beans.
One time when I couldn't afford pork chops it was oat meal, bread and OJ for two weeks.
Now with children in the house it is whatever they don't finish or a soup. Sometimes I buy potato salad or salmon dip the store makes themselves, sometimes I eat with crackers and sometimes not.
My go to meal for my son is easy, bologna and cheese and crackers and for my daughter she prefers oatmeal.
