First of all, great writing in this article. I really like the way Kerry describes this recipe. Very refreshing, straightforward and funny.

Secondly, I love this meal as an example of combining some of the most delicious, healthy items out there into one amazing meal that is jam-packed with nutrients. Lentils de Puy are also excellent drizzled with walnut oil and sprinked with goat cheese. Yum!

I'm from Scandinavia (Sweden), you seem to be intrested so...
That's a pretty common sandwich over here, like someone said - IKEA does a pretty good version of this. It's intended to be eaten with knife and fork, in most places people would think it's a bit rude to eat with your hands.

What you call a "open face sandwich" is just a sandwich to us. What you call a sandwich, we call a "double sandwich". Usually you only use two slices of bread if you go on a picnic, for practical reasons.

Different styles, but I tell you... I miss those american style sandwiches over here.

I remember in the early 70's eating at relatives of my husband in Holland - there was bread, ham, cheese, on the table and I remember well how the table went entirely quiet when I put ham AND cheese on one piece of bread, then added another piece of bread on top - they had never seen anything like it!

I have to admit though that the above open faced sandwich looks mighty fine - I could cosy up to that, and I will - here in Canada, it is one of the Sandwiches offered at Ikea cafe!

Banning fast food near schools? Your take.

Why are we, as a society, allowing such poor quality food (and I'm not talking about the taste) to exist and be consummed. There is a serious problem when low quality and nearly-poisonous "foods" are targeted to low income groups (students, neighborhoods) because they're cheap. Well of course, they're cheap! You get what you pay for... and worse, you'll keep on paying for it with your health.... Diabetes, High Blood Pressure, High Cholesterol, Obesity. Shouldn't we be supporting and defending companies that take pride in their quality foods? Moe importantly, fast foods and soft drinks should be banned INSIDE of our schools. Students should have healthy options -- at least in one area of their lives!

My high school (which had a closed campus to all but seniors) offered a lunch item that was 3 breadsticks, a cup of marinara, and a cup of cheese sauce..... not exactly healthy. They did have salads but they were always brown and watery and cost about a buck more than regular (read: unhealthy) lunches. So I don't really see how fastfood can be that much worse.
