Poll: How Picky Are You About Coffee?

I'm a tea drinker at heart, and I'm only *just* starting to develop a taste for coffee. I don't need to want the caffeine boost in the morning, since tea is enough for me, so when I do occasionally drink coffee, it's only worth it if it tastes good.

Cook the Book: 'The Pot and How to Use It: The Mystery and Romance of the Rice Cooker'

I really want this book! I live in Japan and my rice cooker is indispensable. But if I have to choose another tool, I'd say my spoons are pretty nice. When I first moved over here and had nothing and no money, the one spoon I had magically turned into a fork, blunt knife, spatula, cooking chopsticks, whisk, you name it. Since then I've acquired a few more essentials, but I am not so much a gadget geek because I don't have room for them. The rice cooker will always have a place in my tiny kitchen, though.

What Foods Do You Miss Most as an Expat?

I've been living in Japan for over 3 years now, and I can relate to the Kraft mac and cheese cravings. Good cheese in general is hard to come by and/or absurdly expensive here. I especially miss sharp cheddar. I also miss Mexican food, vegetarian restaurants (even though I'm not veg), hearty breads with thick crusts, whole wheat anything, more pasta varieties than just macaroni and spaghetti, chewy cookies, and, oh dear me, craft beer.

I'm not sure about the exact size of the tool you're using, but it looks like you could repurpose it to make largish takoyaki, which similarly lend themselves to freestyle add-ins like cheese, kimchi, etc....mmm. :) Oh, and you can use a chopstick to turn those, if you don't happen to have a knitting needle in your kitchen.

This looks great! For some liqueurs, I've had better luck with rock sugar than with regular granulated sugar, but I'm not sure exactly why. Do you think that would make any difference in this recipe, or would it just slow the process down too much?

I try to avoid giving myself immediate cavities, but I have a huge sweet tooth and probably would like this candy. Other old-fashioned favorites: candy cigarettes, chalky violet candy, Necco wafers, ribbon candy, maple sugar candy. Though I guess that last one is too refined, too regional, and too currently popular to be called "nostalgic".

Quince Brandy

Hello! I attempted this recipe last night after much anticipation. However, I'm a little puzzled about the quantities you used. I only had two 1.5-quart jars, which I filled halfway with quince (estimating that you would have used about 3 cups of finely chopped quince per jar) and then added half a bottle of brandy to each one, which didn't even cover the fruit all the way. In other liqueurs I've made, the fruit is always floating a bit in the alcohol. About how many mL of cognac did you use per jar, or in total? Should I add more brandy to cover all of the fruit?

Black and Orange: Black Sesame Seed and Sea Salt-Crusted Salmon with Wasabi-Lime Sauce

I made this tonight, and it was *wonderful*! A big hit, and super easy to make. The recipe was easy to follow; thank you for the good writing.

To the commenter who said that the recipe was overkill, I have to say I almost agreed at first. I cringed when I read the line "the sauce cuts the fishiness..." because salmon isn't that fishy in the first place. But, I gave the recipe a try and it turned out great. The sauce is much milder than you'd think, and the short cooking time makes it possible to still enjoy the flavor of the salmon in its natural state.

I highly recommend this!
