Cooking for a Diabetic?

we live in an area where the nutritionist classes are not available. my mom and my cat were diagnosed around the same time. bubba (cat) was on insulin from day one, about 4 years ago, and was very stable right up until he developed other problems. mom, not so much. she only went on insulin a couple of months ago, and is finally more stable.
my husband was only diagnosed in june, a complete shock, and we radically changed our diet. we gradually added other foods, and have found that with his oral meds (glucophage) and regular testing, he tends to keep close to 100 BG. he eats what he wants for the most part, a lot of of stuff i learned over the years being on high protein diets. even weight watchers works! tonight, we are having spaghetti. we've had pizza, we have in-n-out burgers every couple of weeks. he's found a low sugar ice cream, and he has a drink a couple of times of week (my mom has a martini every night. her doc told her it's okay).
eating a lot of protein is good, the good starches are good. simple sugars are hardest. test a lot.
and for you cat people? feline diabetes message board (FDMB). i learned a lot there, cats and people are very much alike.

waitstaff memory: how do they do it w/o a pad or pencil?

i visited a "friend" a couple of years ago, trying to avoid a mental breakdown (it didn't help, ha-ha). we went to a rather nice restaurant one night and my food wasn't cooked to order. she refused to send it back because she insisted it was "fact" that they would spit in my food if i sent it back.
they also undertipped (seems to me THAT would cause any spitting) everywhere we went and refused to allow me to pay or leave tip.
i only waited tables a couple of times, and was lousy at it. i was slow, and took a long time writing things down. i DID get the orders right, and explained i was new, and was always friendly, so i got decent tips.
what stunk was there was a communal tip jar, and whoever worked the most hours, got the biggest share. but i always appreciate a good server,
love when they flirt a little, a personality means a lot.

sorry, guys, still my first day here, i probably don't have the rules of posting down yet!

Most ridiculous food-craving acts?

hmm. i'm supposed to be on medifast, and my husband was recently diagnosed as diabetic. oh, and my daughter weighs more than i do.

i made my daughter go to mcd's for a supersized frenchfry because what they made for dinner had green peppers in it, which i can't tolerate.

i ate them, and they were terrible, due to the new oil or something. and i still ate my medifast.

the corner is getting croweded.

Does anyone else eat their pancakes/waffles this way?

my dad used to gross me out when i was a kid in the early 60's ordering raw egg on rice at our japanese restaurant (his tour of duty was in japan during the korean conflict... i ate raw fish WAY before it was cool). nearing my 50's i've discovered this is really perfect... the very hot rice cooks the egg to absolute perfection. but i can't stand my egg near my pancakes. potatoes, yes, a well cooked egg is the best.
waffles? i love peanut butter and syrup.
if i could have all the above in one setting, and not gain a pound, i might die happy (and biscuits and gravy, of course!)!

Anthony Bourdain, I AM NOT SOUTHERN

i'm brand new, and this is my first post. had to pop in and defend "my tony".
he can do no wrong in my book, and i have a bit of a crush on him. i don't think this episode was any more or less snarky than any other. i HAVE lived in the south and my family's roots are deeply southern, so i do agree with pumpkinbear about some people's attitudes about the south in general. for instance, a couple of years ago, i finally achieved my dream of having a flagpole installed in my front yard (in so. cal., where i've spent most of my life). my husband had to sit me down and gently explain why i couldn't fly the stars and bars, and i was shocked!
i'd suggest, max, go back and watch the whole show. tony at least beats the pants off of andrew zimmer in the table manners department, IMO.
