The Whole Story of Mozzarella di Bufala

As far as I am aware Mozzarella di Bufala - is made from unpasteurized milk - hence the risk of contracting Brucellosis.

Pasteurization does not eliminate the risk of Brucellosis completely - as it is not sterilization by any means

Herds that are infected unfortunately have to be killed

Brucellosis is named after Dr David Bruce who isolated the micrococcus

Sir Temi Zammit a Maltese Dcotor identified the source of the infection - the Goat in that instance

There are at least 6 different types of bacterium - and many mammals can be the source

Goats, Pigs, Cows - some sheep tend to have resistance

The reservoir for this bacterium is unknown - so that from time to time sporadic epidemics occur

The disease, although treatable with tetracyclines, has a definite mortality in man - perhaps in the order of 0.5%

So it best avoided - by sticky to Pasteurized products
