"it's equally exhausting to be nice and hospitable constantly, especially to the guests who don't reciprocate. All the smiling wears on you. All the patience."

You've hit the nail on the head with this one. During the day I work in patient care at a very well known hospital. We put the patient first. And the the smiling, the niceness, the same questions I answer over and over again in a cheerful tone begin to wear on me. It's not that I don't enjoy the service industry--I do. And I genuinely enjoy helping people. But couple that with waiting tables 3 nights a week, I just get sick of being nice.

My boyfriend often wonders why I end up as a social recluse on my off time, but it's nice to just get lost in my own thoughts. Not to have to fake a smile or recite the ingredients in the soup of the day for the 17th time.

But when a guest or a patient truly 'gets it' and reciprocates your enthusiasm, it's definitely worth it.

Food Safety Question

The freezing and re-freezing of the meat sauce shouldn't be a safety issue, but do make sure that your lasagna or whatever you make from the sauce reaches an internal temperature of 165, since you're reheating a previously cooked, high-risk food item.
