Equipment: The 7 Most Essential Pots and Pans

Pretty lazy research. No kidding Al-Clad and Le Creuset make good products. I've built kitchens for all three of my adult kids and the best bargains out there can be found in the kitchen sections at Homes Goods, TJ Max, Marshalls, and Ross. All sizes of Cuisinart tri-ply stock pots and saucepans, Cuisinart Green non-stick, Chicago metallic ware, enamel cast iron, cutting boards, and dinnerware.

Macy's has some great deals on Belgique pans and Martha Stewart Dutch ovens if you keep your eyes open for holiday bargains all year long.

DeBuyer carbon steel or non-stick saute pans are fount online at Chefs Catalog. They often offer free shipping. Lodge bargains can be found at all camping stores.

Do you fortify your soup stocks with base?

If I'm making chicken stock I dip into my stash of frozen wing tips saved from a prior chciken wing blockbuster (or a pack of wings). and roast them on a sheet pan with shallots, carrots, celery, salt, pepper and thyme. Then I add water and simmer them on the stove top till the aroma is irresistble.

In a pinch, Better Than Boullion can jazz up a can of chcicken broth like you cannot believe.

Add lobster BTB and simmer with minced red chiles, throw in some shelled shrimp and rice noodles and top with grated carrot , cilantro and scallions.

Add mushroom BTB and simmer with sauteed mushrooms and a sprig of thyme, a splash of Brandy and a splash of half and half. Buzz with an immersion blender or serve chunky style.

Add chicken BTB and simmer with parboiled diced potatoes, lots of cracked black pepper, a splash of cream and buzz till smooth. You can also use cauliflower or carrots or fire roasted tomatoes for a smilar speedy and creamy hot bowl of goodness.

How could anyone not like Chinese? The pork buns and roasted rice cakes at Momofuku are incredible.

The Bridge and Girmaldi's is a great idea...remember to bring cash. They don't accept credit cards. Skip the overrated Brooklyn Ice Cream Factory and go to Jacques Torres' original store instead.

Lombardi's is also a NY original and Rice to Riches is right across the street. Talk about unique.

If they are into wine, go to ino...it's adorably small with a great selection of wine and paninni.
