Substitute for Sherry?

I'm making Bourdain's mushroom soup (from the email a few days ago) and I don't really want to buy sherry for it as I rarely use it.

Does anyone have any recommendations for a substitute? Obviously it adds a lot of flavour so I'd prefer not to substitute broth.

Just as a reminder:
Bourdain's Mushroom Soup
6 tablespoons butter
1 onion, thinly sliced
12 ounces button mushrooms, halved
4 cups chicken stock
1 sprig parsley
2 ounces sherry
salt and pepper

Foodie on a shoestring (Rome and London)

I've just planned a very last minute solo vacation to London and Italy. I'll be
in Rome for a few days and travelling toward Bologna for a food adventure.

Given you're on a budget (think backpacker in a hostel), where would you recommend for London and Italy?

I like good authentic food. Often food stalls and underground/back alley restaurants are the best finds. Do you have any great hidden gems that tourists don't know about and make you truly feel like a local?

Toronto - Where to eat?

I hate Spring Rolls too! Everything is overcooked and there are gobs of sauce. There are a million other Thai places that are far better.

Toronto is a fantastic place for food. I live here and trust the Now Toronto Cheap Eats Guide. Just get out of the downtown business core and go a little west on Queen or College and you'll be fine.

Also I like the reviews on Blogto.com, they have lower standards than me but they show pictures.

Chewy owes his/her mother an apology along with "Housewifes" everywhere. Maybe you should pay attention to Batali when he talks about Italian cooking. Those little "mamas" and "grandmas" he's so fond of and credits with the true Italian cooking are...housewives. Ayngelina, as soon as you can, invest is a small bottle of sherry. It really does make a difference and you'll be surprised at how many recipes you can try or enhance with just a little. Question: If you don't like Bourdain's cooking why would you buy one of his books? That would be like buying a RR cookbook and using it as a doorstop.

Blake, I agree with you about Bourdain. He really isn't known for his cooking skills as much as he is for his personality. And I also agree with you that roasting a chicken is an art. Any housewife can roast a chicken, but it takes a keen cook to get the skin crisp and the meat moist and tender.

AddiE: I'm assuming that it freezes really well as cooked mushrooms do well in the freezer.
