Cranberry Butter recipe needed
Years ago I had a recipe for making (canning) Cranberry Butter. This is not the stuff made with butter...but a fruit spread. It was made with cranberries and apple juice...i cant find the recipe anywhere...anyone???

madelyn....ty sooooooooooooo much...that is very close...i am going to try that one...cant see any reason i couldnt process them like i did the others in a hot water bath
Thank you both so much for your comment...I will just have to keep looking ...this is a "butter" (as in jams, butters, jellies) that you make and can in a hot water bath...it is awesome on toast or waffles...but it was definitely made with apple juice not apples...I may have to do some experimenting. Thanks again

I don't know if this is what you call cranberry butter, but this is like a cranberry preserves... super easy and super delicious. I gave it away as presents last Xmas...
1 bag fresh cranberries
1 cup apple juice
1 cup brown sugar
Put it all in a large heavy sauce pan and let it boil. Watch out, because it could boil over. Cranberries will start to pop on their own. Simmer over medium heat, stirring ocasionally. Every time you stir, break some of the cranberries.
Remove from heat when the cranberries have cooked, about 15 minutes.
Let it cool down a bit before handling, the mixture can burn.

Most of the best apple butter recipes call for cider. Seems you could simply sub the crans for the apples, increase the sugar to taste, and then do the puree/sieve routine.
When I make cranberry sauce I usually do a version that includes a dash of cinnamon. If it's to be eaten with lamb or a gamy meat, I also add a couple of cloves. It's a very subtle enhancement, but those spices go surprisingly well with the crans, and more of that dish always gets eaten than the plain stuff.
So, it seems a regular spicy apple butter recipe would easily adapt to cranberries. I'd give it a try if I were you. What have you got to lose?
Like the two replies above, google didn't turn up much by way of cranberry butter recipes. There are a lot for apple-cranberry however. And this interesting article about fruit butters in general.
