Help Me Perfect My Stovetop Espresso Maker Coffee

Like some said, Medium to Medium-High heat is fine. However, I was told by an Italian that as soon as you hear the botton start to boil you should remove it from the heat. It is normal for there to be some water left, if it completely evaporates it can start to damage your coffee maker. Also, I don't think anyone has mentioned to NOT clean the coffee maker with soapy water or scrub brush. I rinse mine out everytime, and every week or so just lightly wipe it out with a paper towel. I have seen stovetop espresso makers in Europe that look completely brown and gross on the inside but make the best coffee. The oils in the coffee coat the metal and protect the coffee from tasting like metal. Hope this helps!

Weekend Book Giveaway: 'American Cheeses'

Real Wisconsin Cheese!!!!!! It is a well known that cows are, in fact, not happy in California. They like the cold. But seriously, although they are not the best cheese, cheese curds from Simon's Cheese in Kaukauna, WI are pretty great.

"Bold" or Burnt?

*wookie
there certainly is a difference, but I was just expressing my concern that in the pursuit of more flavor coffee is verging on burnt. I love the intense flavor of espresso as well, which also proves my point. Espresso doesn't taste burnt and it uses a very darkly roasted bean. Also, much of the issue has to do with the preparation of the coffee. Its amazing how inept (read careless) baristas can be.

Seriously Delicious Holiday Giveaway: D'Artagnan Boneless Heritage Ham

has to be grilled onions, cheddar, good grainy mustard and, of course, a good bit of mayo.

Cook the Book: 'The Modern Baker'

Succes: The perfect chocolate chip cookie, yes it is possible.

Disaster: Not mine, but a friend of mine whilst baking with his girlfriend, very recent girlfriend I add, forgot to put flour in their cookies. Needless to say, they didn't quite turn out. Love makes us do strange things, I suppose.
