Cabbage Burgers
Here's one, If you find it helpful:
FILLING:
1 lb. raw hamburger(crumbled)
3 cups shredded raw cabbage
1/2 medium onion (chopped)
1 1/2 teaspoon salt
1/2 teaspoon Accent seasoning
1 1/2 cups water
Pepper to taste
Heat large skillet. Add hamburger and brown lightly. Drain off all fat. Blend in remaining ingredients. Mix well. Bring to boiling point, turn down heat and simmer, uncovered 20 minutes or until all water has evaporated. Cool.
DOUGH:
1 package dry yeast
1/4 cup warm water
2 teaspoons sugar
2 cups flour
3/4 cup milk (scalded and cooled)
1/2 teaspoon salt
1 tablespoon shortening (melted)
Add sugar and yeast or warm water in large bowl. Let stand 5 minutes. Blend in milk, salt, shortening and flour. Mix well. Turn dough out on a floured board and knead several minutes until smooth and elastic. Place dough in a greased bowl. Cover bowl with damp cloth. Let rise until double in bulk about 30 minutes.
Roll dough onto a rectangle about 1/4 inch thick. Cut dough into squares about 4 to 5 inches in size. Place 2 heaping tablespoons of cabbage meat mix in center of each square. Bring 4 corners together and pinch shut. Gently mold into circular shapes. Place burgers, seams down on greased baking sheet. Let rise in warm place about 20 minutes. Bake in preheated oven at 375 degrees for 30 minutes or until done.

An old favourite of mine, I hope you like it
A couple goes for a meal at a Chinese restaurant and orders the "Chicken Surprise." The waiter brings the meal, served in a lidded cast-iron pot.
Just as the wife is about to serve herself, the lid of the pot rises slightly and she briefly sees two beady little eyes looking around before the lid slams back down.
"Good grief, did you see that?" she asks her husband.
He hasn't, so she asks him to look in the pot. He reaches for it and again the lid rises, and he sees two little eyes looking around before it slams down.
Sputtering in a fit of pique, he calls the waiter over, describes what is happening, and demands an explanation!
"Please sir," says the waiter, "what you order?"
The husband replies, "Chicken Surprise."
"Ah... so sorry," says the waiter, "I bring you Peeking Duck."
What's your favorite kind of meat?
Fillet Mignon, medium rare, with baked potato and asparagus.London Broil is also what I like. Though I eat meat occasionally only. Major part of my diet is fruit, vegetables, whole grains and nuts. Like to keep those antioxidant levels up.

I don't roast the duck - I purchase it from a Chinese deli, so not sure re the toaster oven.

DONE!! I cooked with my little 7-yr old niece Natalia a Cheesy Spinach, Almond, Mushroom and Tomato Lasagna... She picked all the ingredients, melted the cheeses and assembled it. We baked it in the toaster oven so it would be done as fast as possible... she was HUNGRY!!
It was super fun...

I made simple pizzas this weekend.
Very simple.
Yet it's kind of a big deal when you live in country lacking in ovens and that regularly serves sweet potato and corn on their pizzas...
What's your favorite kind of meat?
I eat mostly chicken and fish but I love lamb now and again (especially lamb curry or lamb kebabs) and good Argentinian beef if I'm back home in the form of a traditional 'asado'. Otherwise, I don't care for beef at all. I'm not a fan of pork either, unless it's good Parma Ham or Jamón Ibérico. Roast duck and pheasant are great! We had those last Christmas in a red wine and plum sauce...yum!

I've done several of Eric Ripert's toaster oven recipes. The frittata is especially good and the chicken tenders disappeared really fast. I wish he'd do more - they're the best toaster oven recipes that I've found.
His art and cook book is a gem too.

Favorite meat is like favorite dessert - a mood-driven choice. There are times I need beef (takes a while to digest) and times I need chicken (a bit lighter in texture). Lamb is a must on some holidays. And yes, there are times I crave veal, political correctness be damned.
I couldn't whittle the choice down to just one type. For sure I won't eat rabbit. I had one as a pet in Brooklyn. My mother paper trained him and he had the run of the house. It would be like anyone else eating dog or cat.

Thanks for the responses. I made my Bierocks/Runzas/Cabbage Burgers last night and they were really good. Here's my recipe (I doubled the recipe).
Dough (I doubled this)
Proof yeast:
2 T warm water
1 package or 2 1/4 t yeast
1/2 t sugar
Dough mixture
3 c flour
2 T sugar
1 t salt
3/4 c + 2T of scalded milk
2T shortening (I used lard)
1 egg slightly beaten
Filling (I doubled this)
1 onion diced (I used visalias)
1 T olive oil
2 cloves garlic minced
1/2 lb ground chuck
1 T canola
1/4 cup white wine
1/2 lb chopped napa cabbage
salt and pepper
I proofed the yeast for about 20 minutes. Then I added the remaining dough ingredients and used my stand mixer to combine. I switched to the dough hook and kneaded for about 5 minutes until the dough became smooth and elastic. I covered with plastic and let rise while I cooked the filling.
I placed the olive oil and the onion and a pinch of salt in a large dutch oven over low heat. I cooked for 30-40 minutes stirring occasionally until the onions were lightly carmelized.
Meanwhile I heated the canola oil in a skillet over med-high heat. When hot, I added the ground chuck and stirred constantly until the meat was browned. I drained it in a colander and deglazed the pan with the wine.
When the onions were cooked, I added the garlic and cooked for a minute or two then added the beef, deglazed pan juices and cabbage. I turned the heat to med-high and cooked until the cabbage was tender. I found that I need to add a fair amount of salt and pepper. I turned off the heat to let the mixture cool.
The dough rose for about 30-45 minutes. I rolled it out into a sheet on a floured board to about 1/4" thickness (the dough was really easy to work with; very soft but not sticky). I cut the dough into 18 squares measuring about 5 x 5 inches. I then used a #30 ice cream scoop to place a little less than 3 tablespoons of filling on the middle of each square. I then sealed the packages by pinching together opposite corners so they met in the middle then sealing the edges. I turned them over and formed them into balls making sure the sealed edges were under the rounds. I placed them onto greased cookie sheets and baked them in a 400 degree oven until they were browned, about 15 minutes.
The dough was perfect. Kind of puffy and carameled on the bottom if the filling mixture leaked a bit. The filling was good too. I froze half the recipe after baking.

Definitely a burger, medium rare, is my favorite kind of meat. If you would've asked this two years ago I would have been shocked by my answer, but tastes change, I guess. I blame my husband, whose motto is, "If it moved, I eat it." (Oh, to go with my favorite meat, a slice of American).

GO MEAT! I love all meats with the exception of veal...I'm a total hypocrite, I loooove lamb but cannot bring myself to eat veal...I don't know why...

Being named lordhelmet and saying "I like to bite into hot steamy sausage in the morning" almost made me spew out my water. :P
As for a favorite meat, I'd have to say beef. We eat beef 7 days a week - ground, chopped, sliced, slivered, roasted, raw, fried, stewed, grilled, in soup, sauce, sandwich, in the winter, spring, summer, and autumn, and so on...
I can't decide on a favorite cut.
