Pistachio Gelato Smackdown: Grom vs. L'Arte del Gelato

All I know is the pistashio I ate last fall in Rome WAS the best I have ever had, before or since that November night. Don't know the name of it. My host, who liuves there, took me to this tiny shop in the north part of Rome.
And since I live in Portland, Oregon, I have never had the pleasure to eat at any of the places mentioned in NYC. Darn! But Portland now has a dozen gelaterias.

Substituting agar agar or tapioca flour for gelatin

I looked at the marscapone strawberry pudding recipe that was mentioned. It was funny as it called for apricots even though it was called "strawberry pudding". Guess you can substitute. But how do I judge how much agair flakes to use for say. 4 cups of liquid(buttermil;k, cream, vanilla and sugar)? I knew they needed to be disolved in hot liquid. I just don't know the equivalents to use here in the panna cotta recipe. Is it equal amounts of agar to gelatin?

What is it made from? I am guessing Natural Dessert's gel is made from agar agar, arrowroot or tapioca.

Eating in Seattle, Vancouver, and in between

In downtown Seattle, there is a wonderful and authentic Argentinian restaurant aptly named Buenos Aires. They have a terrific happy hour with $3 matinis and the tastiest camarones(grilled shrimp) you'd ever want to taste. And the waiters are nice on the eyes......
