I grew up in a German American household and there was pork and sausages almost at every meal. As a young adult though I rebelled against, having reached a saturation point I guess. I then went to cooking school and I , gradually in my 30s, 40s and now 50s, have developed a true appreciation for this meat and for its source, the humble but smart pig. I use it now in so many dishes and feel the need to use all parts of this intelligent animal. It is a wonderful protein source and the fat in moderation of course is actally good for you.
