Just to throw one more hat into the ring -- I've been vegetarian for going on 7 years or so now, and I used to be a diehard faux meat opponent, and then started caving in more and more (to fit in at cook-outs, for convenience, etc.). But I agree with Kenji on the detrimental impact of processed foods -- environmentally and also health-wise.
So why not make your own? Good vegan sausage is ridiculously easy to make and removes all the packaging, waste & additive problems you were talking about (unless you use nutritional yeast, the production of which is a huge source of pollution). Same with veggie burgers, and though I've never tried it myself, I've heard tell of tempeh-based vegan bacon.
Also wonder what your take on nut-based creams and 'cheesy' sauces is? Those are also easy to make at home and even simpler ingredients-wise...
