Oh, that's a toughie. Depends on the circumstances. Stilton is a perennial favorite, but I also love Leiden cheese, and cubes of Gruyere are great for snacking. A current favorite is Cambozola.
Crisp enough so it doesn't droop, but not so crisp that it shatters.
Dark, but not so dark that it's bitter. A really good Ghiardelli, say. Or, for sheer quantity, Toblerone.
Ribeye, with the bone so I can gnaw on it like a troglodyte. Nice and crusty on the outside, with a warm pink center, topped with some sauteed mushrooms and some good blue cheese... arghhh, my stomach is rumbling!!
The omelet with caviar at the original Brasserie on 52nd, but that's just a memory now... sigh... so it will have to be a bagel with a schmear, preferably from some place in the Murray Hill neighborhood.

I've admired the Zingerman's catalogue for years, but I've never gotten anything from them....but I'd really love to!
Manchego, a good Parmagiano, or very sharp Wisconsin cheddar.
I love any white cheese.. white american, any of the mexican cheeses.. plain ole farmers cheese (yes I know Its boring!)
I'd have to say horseradish cheddar (though I'm also a big fan of brie and muenster).
Freshly grated Romano cheese on pasta, salads and meat dishes.

The Derby Sage someone mentioned above is also making a regular appearance in our house. Not everyone likes it which just leaves more for me!
