Julia Child: Chef and WWII Spy

Is this a light news day, or something? Julia Child never made any secret of her work with OSS; she started as a file clerk and her superior organizational abilities earned her a chance to develop a filing system for the office where she worked. Just because she worked for OSS doesn't mean she was a "spy."

Do you have one favorite go-to, all comprehensive cookbook?

I'll be a "Joy of Cooking" dittohead, and add Julia Child's "The Way to Cook." Julia's "Mastering" has been in my kitchen since it first came out. Her "Julia's Kitchen Wisdom" is wonderful to have on hand when I have a senior moment on some essential, such as what temperature to bake a quiche, etc. My life wouldn't be the same without Julia. Oh, how I miss her.

Has anyone received the Cook's Illustrated test recipes yet?

That's interesting, Brooke -- I just got a recipe for No-Roll Pizza Bianca with Tomatoes and Parmesan! I wish I'd gotten the one you got, frankly.

I just made the dough, and it's a sticky mess; I think the technique as described is overly complicated and a waste of time. I'll bake the pizza later today and see what's what. I'll be interested to hear how yours turns out.

Has anyone received the Cook's Illustrated test recipes yet?

Like most of you I didn't hear anything for at least two weeks after I signed up. I received a recipe on Feb. 1 for Bok Choy and Egg Noodles with Spicy Beef Sauce. I was a bit insulted when I discovered that it is a very slight modification of a recipe they published in 1998. If it was good then it's good now, if it was bad then it's bad now, so what's the point? It's not a very good recipe in any case. It will be interesting to see what the future holds.

I can't help but ask -- how was it? The blogger stopped short of the full experience! Will I have to go make one myself, and put it on my homemade hamburger bun, just to find out? The suspense is killing me!

This is not old news. Do you all really think that Julia Child would talk about a Top Secret, classified intelligence job for years, like it was nothing? The first thing they tell you to NOT do when you are given a Top Secret clearance is not to talk about the classified work you do! And if you had read the first line of the linked article you would have seen this:

"When Julia McWilliams left Newport News, Va., by troop train to travel to California before her assignment in Southeast Asia, she was instructed to tell people she was a file clerk. She had been sworn to secrecy and forbidden to keep a diary. It was February 1944."

Farther down on the page was this:

"Though Julia would later say, modestly, "I was just a file clerk," she had a high security clearance for her work, which included all classified papers for the invasion of the Malaysian peninsula. She tracked sensitive documents, dispatches, and espionage/sabotage under the South East Asia Command, then headed by Mountbatten. A colleague in Air Force Intelligence, Byron Martin, stated that Julia "was privy to every top secret ... which required a person of unquestioned loyalty, of rock-solid integrity, of unblemished lifestyle, of keen intelligence.""

Old news; she talked about this for years. What no one has mentioned is that the information was released the day before what would have been her 96th birthday, and the day after the 4th anniversary of her passing.
Julia Child, August 15th 1912-August 13th, 2004. We miss you!

Burger Made of Ground Bacon

I added a handful of dried bread crumbs and a small egg to the ground bacon and the burgers held together when grilled. These have quite the potential for a grease fire if not closely monitored.

I a no-roll pizza bianca, too, but it calls for portabella mushrooms and taleggio cheese. Looks interesting, but not sure I'll have a chance to try it. Not to mention, could be tough finding the taleggio cheese around here...

I just got No-Roll Pizza Bianca. The only "toppings" on this is olive oil, salt, and rosemary. Sounds like the tomato and parm one might be tastier!
