@Calypso57 - you are right on point with the recipe. I never knew about a recipe, I just remembered how my mother made them each TG. However, I don't put quite as much sugar. Everything else is exactly what I use to make sweet potatoes - taste good cold also.

Dec. 5-7 Loner Vacation

Keeping up with you deli and cheesecake desire, I would say go to Carnegie Deli on 55th and Seventh Avenue. You can have really good sandwiches and really good cheesecake - all in one place. Then, if you feel the need to go to brooklyn - give Junior's cheesecake a try. But I really love Carnegie Deli. Have a great time in NY.

Is dating a picky eater a dealbreaker for anyone?!

If you are a foodie, let him go. Why compromise on one of the most enjoyable aspects of your life. From what you say about him, I think he is just narrow-minded and stubborn. To say I don't like mustard and not try anything with mustard on it is childish. There are a great many different tasting mustards. Look at the bigger picture - he is not even willing to compromise. You will always be on the shorter end of the stick. Good luck in your decision.

Hey gabagool - I think both Ina and Paula are good cooks. Grants their style is as different as night and day, but to put down Ina - you are so off the mark. He food is always good, clean and tasty (as I have tried many of her recipes). Also loving Paula with (everything tastes better with butter) attitude - I have also made some of her recipes and enjoyed them just as much. I personally, choose not to pick one over the other. FN is big enough for the both of them.

Anybody have a good Mofongo recipe?

I made mofongo for the first time today. I was awesome. I did not soak the plantains at all. I sliced them in about 1 inch rounds and fried them in vegetable oil until crispy. I made a paste of garlic, salt and olive oil. When the plantains were done, I smashed them in the paste, adding a little more olive oil. I rolled them into balls and OMG they were the best ever. I had to stop myself from eating all of them. I must say they are very easy to make.

Turnip

Each year around Thanksgiving I purchase turnips. Sometimes I find them with wax and sometimes without. I steam and mash them with salt, pepper and butter. Yum. After Thanksgiving, when I make turkey soup, I buy them again and add chunks to my soup. Turnips are quite delicious to me and my family.

Down Home With The Neely's Dilemma!

I have been watching the Neely's since the beginning. Overtime, I have found Gina to be far too anoying. I have noticed that Pat tries to tell some small stories about certain dishes, and immediately Gina cuts him off. I do enjoy watching him. I get the feeling that if he does not indulge Gina in her need for attention, he will have hell to pay. I love the recipes. Can someone just ask Miss Gina to tone it down, so we don't have to turn them off.

Okay, so I peeled, cut and boiled sweet potatoes. I then added various amounts of butter( quite a LOT), brown sugar, white sugar, and maple syrup, touch of salt. And as pattypooch said, boiled away till gooey!
It LOOKS just like it, we'll see what Dad thinks in a few hours!!!!

my sister & i have been looking for ms paul's for weeks. could not find anywhere. our sister found this recipe years ago and said she wishes she found this many years ago she would have saved alot of money (no offence mrs paul's) patty pooh swears this is the receipe

6 med sweet pot ( cooked ,peeled,cut into 1/2 cubes)

heat stirring constantley
- 3 tbsp butter
- 3 tbsp milk or water
- 1/2 tsp salt
- 1/3 cup brown sugar
until smooth & bubbley add potatoes heat thru

OOOHH__I did make a change, but has been met overall with approval. I have combined the traditional corn casserole and plain cornbread dressing. I have taken the PF cornbread and added creamed corn, sweet corn, a few eggs, chopped green chiles, turkey stock and 1 dozen bean tamales. Just taste tested it--MANNA!

Last night we had macaroni and cheese with diced turkey ham, some corn, a salad for me, and some homemade rolls. It was good, but I ate too much.
About an hour after dinner I found out my grandmother (94) had just passed. I've been nauseous ever since.
The guys had burgers tonight and are going to an SU basketball game. I'm going to spend some quiet time remembering "Grandma moments," and maybe have some soup. Not much appetite. The holidays are going to be different this year.

@pjracz10: It's not fancy or impressive (I know I could be shunned for some of the ingredients), but with limited groceries/kitchen utensils, it works just fine. Prepare one box of cook and serve chocolate pudding as directed (I use a little less milk); once it comes to a boil, stir in a healthy dollop of peanut butter. Pour into a prepared graham cracker crust and let set in the fridge (I also like it semi-frozen). Serve with lightly sweetened whipped cream (or, *gasp!* cool whip).

FOUND IT! I actually found a box in my freezer and have the box!

BACK OF BOX RECIPE FOR SWEET POTATO CASSEROLE

Frozen Sweet Potato Chunks (this box is 12 oz)
2 Tablespoons Orange Juice
1 1/8 Teaspoon Ground Nutmeg
2 Tablespoons Butter (cut in pieces)
1 Cup Mini-Marshmallows


Preheat oven to 400. Place sweet potatoes in 1 1/2 quart casserole dish. Sprinkle with Candied Sauce Mix*. Mix, orange juice, nutmeg and butter evenly over potatoes. Cover.

Bake 30 mins on middle rack. Cut large potatoes, stir sauce thoroughly and spoon over potatoes. Cover and bake an additional 40 minutes or until potatoes are tender.

Mash potatoes with sauce. Sprinkle evenly with marshmallows. Bake,uncovered, an additional 10 minutes or until marshmallows are golden.

*Candied Sauce Mix. Not sure what that consisted of exactly and Mrs. Paul's won't tell. But I'm thinking Brown Sugar. (about 1/4 cup)


Ore-Ida makes Steam & Mash Sweet Potatoes and are sold in a bag in chunks just like MRS PAULS used to. You just need to figure out that Candied Sauce Mix.

Sprouted corn tortilla are by "food for life" co. I buy them from Integral Yoga in NYC, in the frozen food section. I put them in the cast iron skillet w/ a little butter or oil. They stay soft but they have a great taste and texture. I haven't seen them at Wholefoods, so I stock up when I see them at IY. Oh yeah, organic corn!

Monday night is usually what I call "meatless Mondays" or vegetarian dinner, so last night I had a stir-fry of bok choy, dried mushrooms (rehydrated), sliced mushrooms, and onions with the soaking water of the dried mushrooms and finally left-over canned chicken gravy. This was actually very good on white rice.
Jerome, the resident Cocker (English), probably does not agree, his pre-decessor and great-uncle Teemu always looked rather peeved at Vegetarian dinner.
Tonight it is the left over red-cooked pork shoulder that all good Chinese cooks should have in the refrigerator and/or the freezer! I am ashamed to say I did the shoulder for the first time recently but promise that I will make it again and again in the future.

Taste Test: Store-Bought Stuffing

We start with the P-Farm Herb stuffing, home-made cornbread, and add onions and celery and lots of Brazil nuts, sliced in three. (TJ has shelled ones) and mix with a thick turkey-neck stock, with black pepper, sage, thyme, parsley and butter added. Bake in muffin tins. My mpther's recipe which I've eaten all my life.

Last week, a poster on the ChefTalk Forum asked what people were going to change for this year's T-giving dinner. He got a flood of enraged responses... you just DON'T CHANGE the family's traditional T-day dinner! Pretty funny, and my sentiments exactly.

We had breakfast for dinner. Ham, potatoes, onions, and peppers all diced and fried together in a skillet, with fried eggs on top. I think I could eat a fried egg almost every day. :)

This whole thing is just TRAGIC!

Lets put our heads together and figure out what we did with those frozen potatoes because I found Oredia Steam & Mash Sweet Potatoes come in the same frozen chunks like Mrs. Pauls did. All we need now is the recipe.

This is what I remember...

The original Mrs. Pauls' recipe on the back said to use two boxes and sprinkle brown sugar, 4 tablespoons of butter and 2 tablespoons of Orange Juice on them and heat them on 450 for 1 hour then break up the pieces and mash. Reduce the heat to 375 and cook another 40 mins. Top with mini-marshmallows and cook for 10 mins longer.

I can't find the exact recipe online and have emailed Mrs. Pauls to see if they could help.

I made my version of SmittenKitchen's Crisp Black Bean Tacos http://smittenkitchen.com/2009/02/crispy-black-bean-tacos-with-feta-and-slaw/.

Baked tortilla, lots of black beans with onions and chili powder mixed up with feta, and topped with a huge pile of what I'm now calling "southwest slaw." Its just a big plate of delicious.

Pizzoccheri, slightly altered for what I have on hand. Whole wheat noodles instead of buckwheat, beet tops instead of cabbage but the rest is the same. One dish comfort food.
