Posole (Mexican Chicken and Hominy Soup)
Posole (Mexican Chicken and Hominy Soup)
I make huge batches of caramelized onions in the slow cooker and freeze them in batches. Always have them on hand. Just butter and onions cooked for many hours. Deep brown and sweetly caramelized.
Wrapped around pears stuffed with gorganzola and baked. Or a paniniwith fig jam and taleggio.
I love scapes, particularly in GarlicScape Beef Satay. The scapes are the skewers, and in the marinade and sauce. http://bit.ly/bSxECZ
I love eating seasonally, and so look forward to each new wonder. I have just put up a big batch of strawberry jam, picked the last of the peas from my vine for dinner and I am looking forward to tomatoes, other berries, corn (especially corn). I wait all year for each season, and make the most of them when they come around.
Here's my contribution to the Peep fest. Peep Mousse. A more refined way to eat Peeps. In case you were looking for a more refined way to eat Peeps. http://therunawayspoon.com/blog/2011/04/peep-mousse/

I make these Chicken Enchiladas with Pumpkin Sauce every year for Halloween, but always set aside an extra portion for the Day of the Dead. http://bit.ly/ded2LD
I love to make this simple tomato soup base from fresh tomatoes and freeze it. I can thaw it out and season it up however I want! http://bit.ly/9rZcEU
And don't foget Mother's for lunch for po boys or the Debris. So good. Jaques Imo's has a decently priced dinner and good food. Creole Creamery for creole cream cheese ice cream.
I love these Simple Thai Beef Salad Cups http://bit.ly/cfYfGp or maybe a little Watermelon Gazpacho http://bit.ly/dkfpC2. Cold soup is one of my favorite summer treats.
I am finding the contestants unlikeable as well and not enjoying the season very much. Maybe because it ran directly after TC Masters, which was so companionable and friendly. That being said, I think that was one of the most gracious leave-takings of an eliminated chef I've seen.
By the way - I think a "picnic" is a different thing. This was a grilling challenge in my opinion, not a picnic. I know it was on the lawn, put picnic makes me think of packed, portable food. Anyone else?
Huey's, the original in Midtown, in Memphis, Tennessee. Love me a Huey Burger!
I love scape pesto - but I went out on a limb and made Garlic Scape Beef Satay - scape skewers, scape marinade, scape and peanut satay sauce.

Barbecue fest is awesome - just driving around downtown with the windows down and smelling all that smokin' pig is a joy. And though you can't taste the competition BBQ, there are local BBQ resturants that have trucks where you can buy. And all the great joints in town are open as well.
A shame - trying to equate healthier foods with unhealthy foods for sales. I know tons of kids who love hummus and eat it for a snack everyday - even with veggies! Why combine the two ideas? teach kids that healthy can be tasty!

Woman of the Year with Katherine Hepburn and Spencer Tracy. She's a working gal trying to win his heart. Her attempt to cook breakfast is hysterical.
