I love veggie salad in the summer! I make one with broccoli, cauliflower, frozen peas, sliced water chestnuts, minced green onion and crumbled bacon. Make the dressing from mayo mixed with a little sugar. I never have any leftovers!

My favorite chicken salad is mayo based as well. I add celery, green onion, dried cranberries and cashews. I like the tang of the cranberries and the crunch of the cashews. It makes a wonderful, light, summertime dinner.

I depends on what I have around the house and my mood. I LOVE chicken salad period!! But my usual is (of course) chicken diced, mayo, white pepper, lemon juice, lemon pepper, tarragon, diced celery, onion (green or purple) and sometimes I will add cashews or other times curry powder. But my favorite all time chicken salad is from a restaurant chain called Breugger's Bagels, they have the best chicken salad I have ever eaten. Now for the sad part (sniff sniff) they pulled all the Breugger's out of the Pac. Northwest, so I can't have it anymore. Anyone live near a Breugger's? hint hint........

WTF pita?

My three favorite things to eat in/on pita are: #1: cheese, #2: hummus, and #3: pizza (on top of the pita instead of high-calorie pizza dough). I've also substituted it instead of Naan sometimes when I've eaten Indian at home.

I'm a huge fan of the strawberry pretzel dessert on the 4th of July.

Ingredients

2 C. crushed pretzels
3/4 C. margarine, melted
3 Tbs. sugar
1 6 oz. pkg. strawberry Jell-O
1 24 oz. carton frozen strawberries
2 1/2 C. water
1 pkg. cream cheese
1/2 C. powdered sugar
2 C. marshmallows
1 carton cool whip

Directions

Boil water. Add Jell-O. Add strawberries. Chill until slightly thickened. Crush pretzels. Pour into 9x13 inch pan. Add sugar and then melted margarine to pretzels in pan. Mix well and press in bottom of pan. Cook for 15 min at 350 degrees. Cool. Mix cream cheese and powdered sugar. Fold in marshmallows. Spread cream cheese mixture onto cooled pretzel crust. Pour Jell-O on top of cream cheese mixture. Put in refrigerator and let set. Add thin layer of cool whip on top and then serve.

you are all forgetting one of the best (and now very trendy) chicken salads; Bacon-Ranch chicken salad, (we use Nueske's bacon), also some celery, onion, and a 2:1 ranch:mayo blend....we sell lots of this in my deli both in sandwiches and by the pound

I agree all the suggestions sound good to me! However, I don't know too many kids who like eggplant or feta! Unfortunately, I don't know too many older adults (70s-80s) who do either.

What about a vinegar-based cole slaw/veggie salad and a mayo based potato salad? Or cole slaw/veggie salad and simple deviled eggs (mayo, mustard, that all)?

@Wookie - You are all welcome to the party. If I can cook for seventy, what's another 20 of the above foodies! I smoke my butts too (something always sounds wrong when I make that statement LOL.) All of your ideas sound delish. I'm gonna play with the eggplant ones to serve at a smaller gathering. I agree with you guys that you've gotta have slaw, so I'm just cutting back on the quantity and will make some combination of pasta, veggie, cheese salad. Maybe something with a vinagrette since the slaw is mayo-based? Just brainstorming.

I have made something similar with feta, mint & chilies, which I love, but there are some non-mint eaters in my family. No one ever says no to basil, mozzarella & tomato or goat cheese though!

@SSMom.........I cut lengthwise slices of eggplant, brush with garlic infused olive oil, sprinkle w/s&p and grill. Then I sprinkle w/parmesan, put on a slice of mozzarella, topped with a slice of tomato and a basil leaf, roll the hot eggplant and secure with a toothpick. Another way to use those same ingredients and it's delicious! I've used sun-dried tomatoes when I couldn't get great ripe tomatoes. Great as an appetizer!

I agree with perky and ssmom--gotta have slaw with your menu. (Can I come too? Pulled pork is my fave) Make less or try a different recipe?

My recipe is kind of purist. Hellman's mayo, diced green pepper and salt and pepper to taste. The trick is to shred the chicken (all wite meat), not dice it and to add the mayo when the chicken is still very warm. This way, the chicken sucks up the mayo instead of floating in it. Also, resist the urge to boil the chicken. Try roasting bone-in breasts with the skin on (ala Ina Garten). The result is much juicier chicken.

I like the mayo, grapes, toasted walnut, chives version similar to "chew on that" above, but I add some mango chutney to the mix. Delish!

My chicken salad includes mayo, hardboiled egg, a very little grated onion, celery (if I have it), chopped pickle or relish (sweet, dill, bread&butter depending on mood and contents of fridge), celery seed and either dill or tarragon. Sometimes I add a little pickle juice. Salt and pepper, of course. Makes me hungry thinking about it!

Our favorite way is cut in half and spread the thicker side with Trader Joe's hummus. (#1 best tasting packaged hummus according to the SF Chronicle's Taster's Choice column, and I agree!) Then a thick slice of homegrown heirloom tomato and a salad of thinly sliced sweet onion, cucumber and romaine lightly dressed with a lemon juice-extra virgin olive oil vinaigrette and a sprinkle of feta cheese over the whole thing.

Sweet jeebus, I wish my tomatoes were ripe already.

Mine's pretty basic, too, but I'll add to the welcome thread! I use half mayo and half greek yogurt (so it's healthier, and it has a nice tang), diced shallot or red onion, a little finely diced celery, some diced tart apple, and chopped pecans.

I like mine crunchy, if you couldn't tell. And with big chunks of chicken - whatever's left on the carcass after we eat a roasted chicken (which I have to admit usually comes from the grocery store).

You can tuck in slices of hard-boiled egg for a quick and filling breakfast or lunch. The possibilities are endless--try roasted vegetables, hummus, etc. You can substitute the pita in recipes that otherwise use regular sandwich bread--like PB&J!

You can use canned chicken or if you have leftover chicken , pass it in your food processor until it is very fine. Take it out of processor, add mayo ,pickle relish,( I add sweet and dill,) salt, red pepper,little onion powder and if I have it a dash of celery seed. Stir well and enjoy as a sandwich or with crackers. You can also add this to the center of a bed of lettuce. This is the best I have ever had. Hope you enjoy it too. My self I prefere it after it is put in the fridge for a while to chill. YUM

All of the above recommendations sound delicious! I also like to melt a little butter, pat it onto the outside of the pita, sprinkle cinnamon and sugar on it, put it in the oven at 350 for about ten minutes, and then cut it into wedges. It's a great sweet snack!
