Ratatouille leftovers.

Fine Cooking had a page of recipes for leftover ratatouille in their August 2006 issue. The best was to make a gratin by adding cannellini beans, putting it in a baking dish, topping with buttered bread crumbs and baking for 20 minutes. Yum!

Stir fry with chicken, then stir into noodles with some extra olive oil - delicious.
