I have noticed on some cocktail menus, the bartenders are using powdered egg white in their sours, fizzs and what have you. I wonder if it has the same properties as true egg white when shaken in a drink? Those squemish about using egg in a drink can also try the pasteurized eggs that are now at market.

Where To Find Fried Pickles on the East Coast
I love fried pickles but I thought your comment about spears was really weird because I find the exact opposite to be true. The chips tend to get soggy and cold much faster than the spears. Which made sense to me because the spears are crunchier in the first place. I actually avoid places that have chips. Hooters for example has the chips. Which almost everywhere has a hooters so there you go but I don't go because I want the real thing. The full on spear and if you're lucky and you're at Little River BBQ in Townsend, TN then you get the special sauce too (some sort of sweet mustard). It's absolutely the best. Chips really?!!? So confusing....

Looks like gator. I had alligator once at a LA Cajun music festival. Dare I say it: it tasted like chicken. Chewy, slightly goat-frog-swampy chicken, but not bad. Given the large numbers of poodle-predating gators infesting the canals of Forida, I see no reason that Chinatown (If-It-Moves-Eat-It) should not take advantage of the bounty.

i'm not opposed to eating gator, but that photo is really shocking. i think that maybe because its still got its claws, etc., or the lighting, it looks more like a poster against wild animal poaching than a butcher photo. Like seeing a monkey paw for sale in africa or something.

I would bet that it's gator, not croc. Gator meat is really delicious. You'll eat a pig, for crying out loud! Why not a gator? I've had it fried, sauteed, and made into sausage. Don't knock it if you haven't tried it.

I am pretty sure the person who answered the phone didn't quite know about the word alligator (because most Chinese are taught about crocodiles). They used to have signs there saying "Alligator" in English and the Chinese name.

I admit it, I did work as an alligator butcher (not enough crocodiles in FL) for a short time while I lived in South Florida. It was by far the worst job I thought I would ever have. Oh the stories I could tell. The best advice I can give to anyone about alligator meat -- don't eat it. Ever.
