Is anyone else against uncalled for abbreviations when ordering?

Uh, the subtraction of the final vowel, or of the final syllable, from some words is typical of dialects of southern "continental" Italy - say, the heel and the point of the boot! (NOT the islands, their dialects are complicated enough to be actual languages) Up until the '60s, and therefore fully in the time in which most Italian families emigrated to the US, dialect was the language of 80% of the population, therefore, I guess, it stuck with those who never went back to face the evolution of the language (and massive alphabetization).
But no, not even if you go to Bari, will the clerk from the shop hand you grams of Prosciut' or spoons of Righout :)

I just hate it when people order "non-foam decaf" and then spend 5 minutes listing the flavors they want in their mugs, how much the whipped cream should be and where should the cocoa be sprinkled.

Cooking for 80 people

Wow 80 people can be really challenging.
My two cents: how about a boiled potato- canned tuna salad? It's fast&easy and can become quite a hit if you get the right sauce: mayo is a classic, but I would also recommend anything including parsley and-or garlic.
And if you have the time, you can mash the potatoes, mix in the tuna and turn everything into this http://www.cookaround.com/cpg134/albums/userpics/10741/normal_pesce_2.JPG . If the guests include (like I would assume) children, I'm sure they'll appreciate!

Meat, Meat and NO MORE Meat!!

It might be my origins speaking for me, but I find every sort of white fish (trout, pangasius, cod) appealing with a simple dressing of olive oil, lemon juice and sea salt. It's also a great way to spice up your boiled fish if you're on a diet, just replace some of the oil with more juice.

Potatoes are good as a side dish, or fresh salad.

Dessert Pizza! Has anyone tried them?

My favourite kind of sweet focaccia consists in pizza dough covered in honey and grape grains. Nutella, or rather, grated dark chocolate, is of course quite an attractive alternative. Always to be put on the dough basis 5-10' before the focaccia is ready.

question. "Piccata"

Er... I am from Milan, quite a foodie and I would say what you call Piccata is the North Italian alternative for the Wiener Schnitzel, and we call it Cotoletta :)
I´m assuming that used to be the name for the same dish back in the ´10s-20´s when most people from the area left for other countries, and it just remained as such. But I assure you, many would reply with a very confused gaze if you were to ask for something similar in a Milanese restaurant. Just as if you were asking for a frappuccino, or a cioppino, by the way!

Lasagne: Bechamel or Ricotta?

Bechamelle (Besciamella) is the only alternative any Italian could consider, however it depends on what other filling you´re using.
For traditional lasagne ricotta would feel too pasty if mixed with the Bolognese sauce. Also (but I should stress that I´m a bit of an extremist, and Italian) I´d minimize the amount of cheese considering it is anyhow a meat dish.

However ricotta is fine with vegetarian (i.e. spinach, broccoli, courgettes) alternatives!
