5 Guys has better fries? Uh, they look better...until those knuckleheads stuff em in styrofoam, which should be legally prohibited from ever coming in contact with fried anything. Everyone knows that the paper bag was invented by Albert Einstein specifically for the transportation and temporary storage of fried potato products, and to put them in anything else is heresy.

That article shouldn't even be mentioned (except in ridicule) on AHT. Thumbprints are for those who overwork the meat. Its personal preference, but cmballa is right - handled as little as possible and packed so loose they almost fall apart leads to the juiciest result. 'Exactly 3 mins'? That's ridiculous. Salt and pepper well ahead? Knock yourself out, but don't do that to my burger, thanks. And if grilling buns is the only civilized way to eat them - I'll stick with the cavemen at Shake Shack, PJ Clarke's, White Manna, Corner Bistro, etc.

Top 10 Grilled Burgers in NYC?

Thanks, Nick - It's about time Wollensky's Grill got involved in the top tier. It was always pretty good meat, but when they re-worked it a year or two ago it skyrocketed up on my list. The true test of a top burger is one that needs no ketchup - and, though I love ketchup, it would take away from WG's superior product.

Chowhounders Discuss NYC's Most Underrated Burgers

Vastly underrated? Gotta be Wollensky's Grill. They changed everything around - including 86ing those starchy, dry potato wedges. The burger is sublime - juicy and aged-steak tasting. It instantly made my Top-5.

Robb Walsh on Five Guys

Five Guys ignores the most serious rule for fries: Never, ever, EVAH introduce them to styrofoam. The sole purpose of the invention of paper was the temporary storage and transport of fried potato products.

Hanger for 'let's have a steak tonight'. Porterhouse if you live within two hours travel time of one of the Luger establishments. If you're not that lucky, the most ethereal of all are the perfectly aged and cooked strips. I can still remember the top 5 of all time.

Deep-Fried Cheeseburger

Hackney's a small Chicago-area chain of pub-style restaurants, used to cook their burgers in the deep-fryer and serve them on blackbread - they were tremendous. Pretty sure the health police have put stop to the deadly practice. What a shame.

New York's Three Best Steakhouses

Luger's is the most consistently near-perfect steak over the 25 yrs I've been eating red meat in NYC. Service/attitude can be rocky at times, but the meat is the issue - and Peter Luger is always phenomenal.

Not top-3, but the hangar steak at Les Halles belongs on anyone's must-have list. It's the whole package: Great frites, great atmosphere. Following a frisee aux lardons salad, you can't go wrong.

And the winner in the classicly-prepared, diner-style category (hands-down): Pearl Street Diner burn-em-and bag-em...delivered in a brown paper bag (which was invented by the Almighty specifically for the purpose of transporting deep-fried potato product - though few seem to understand that).

@Mike5966: If you have a high BTU grill it is possible. I crank up all the burners on mine and the temp reaches ~700f. I rotate the burger a couple times before the flip to get more char on the burger. If you can get your grill hot enough you will achieve what you are looking for.

I am a big fan of irradiated beef for hamburgers. It nearly eliminates any risk of illness from undercooked beef.

From Serious Eats

Still don't understand the popularity of medium rare when the threat of foodborne illness is considerably high.

E. coli is very real, there is a reason why some restaurants refuse to serve any meat not well done. When you become ill, there will be no one to blame but yourself!

Deep-Fried Cheeseburger

Without the cheese, my local chip shop in Britain has been making deep fried burgers for the last 30 years plus. It's not a Scottish thing, it's a 'chippy' thing to go alongside the heart attack in batter of a Spam fritter!!

Spraying with Pam first helps, but I have found that if you use 93% lean beef, that works best. If you use less than 93%, the grease tends to splatter on the cooking service. If you use 97% lean beef, the patties tend to stick to the cooking surface. Hope this helps. We love ours!

I don't know if they are grilled or griddled, but Pipers' Kilt in Inwood has by gold standardurger I have ever had.

And PFY PJ Clark's burgers are definately griddled, cause while I was eating oysters with my Guiness last week I peeked in the kitchen and saw a bunch of burgers lined-up and staying warm on the griddle. I just hope they don't sit there too long. 5 guys are griddled too.

The Counter Burger is PHENOMENAL, better than Plan B (which tasted a little dog-meatish in a few bites). I used to go to the Santa Monica CB location at least once a month but now that I have moved back to CT, it's been amazing having one of my fav spots to eat cow back on my home turf. Truly, one of the best burger spots. Ever. And AMAZING milkshakes as well. The apple-pie shake and the Churro shake are to die for.

I have hesitated for a very long time to mention my favorite burger in the city, but finally i realize, why not share the love? The burger at Cafe Loup on 13th street is phenomenal. It's huge, fantastic meat quality, and perfectly cooked. It's a classic burger, no fancy shit: subtle spice (just salt, I reckon); nothing but bloody, juicy meaty goodness. (And chedder if you're into that sort of thing.) Absolutely delicious. It is arguably "better" than all of these burgers, with the exception of Spotted Pig's. I mean, that's just the no-competition antichrist of burgers.
