Food Writing/Paula Dean

I am a recent culinary school graduate and I am looking to combine two of my passions: Food and Writing. I'm willing to do anything in the field. The problem is I'm not really sure where to start... resturant reveiws, blogging, etc. Any tips, advice, or direction that anyone could provide as to how to get my foot in the door would be greatly appreciated. A big thank you to anyone who responds!

I also wanted to say how WONDERFUL the 'Paula Dean is trying to kill us' articles are. My girlfriend knows of my hatred for this she-devil of the food industry and shared the glory of these articles with me. As a chef it really, really offends me that people put her on such a big pedestal (even though she needs a BIG pedestal... probabaly all those fried butter balls). I've been to Savannah twice and I'm amazed at the amount of people that flock to 'the Lady and Sons'. I peered in through the window and saw a buffet. A buffet. This woman is a culinary tyrant and her resturant has a buffet. Her merchandise is plastered all over Savannah. They even have Paula Dean trolley tours. It's sad really, that a wonderful town like Savannah, that is full of great independant resturants, is being overtaken by the smelly, cholesterol ridden, cash cow (pun intended) that is Paula Dean. Thanks for bringing some attention to something that people need to realize: Paula Dean is not that great, she's not even good: She is indeed trying to kill us.

Asparagus risotto is very tasty and has a nice look if you cut them on a bias.

You can also wrap asparagus in prosciutto and grill them for just a minute. Blanch and shock them first. Hollandaise is a nice sauce for this.

Keep it simple and let the asparagus flavor speak for itself.

Easter Weekend in Savannah...

Savannah has been one of my favorite vaction spots. My girlfriend and I have really enjoyed walking around the beautiful parks and just exploring. Bay street is what I would consider the main area of 'historic' Savannah. I would reccommend that as a good starting place for just walking and exploring. River Street, which parrellels Bay Street, is certainly a 'can't miss' area with lots of resturants, gift shops, and home-made goodies. The candy stores give out free samples here and there so you can hit that up for some delicious treats. River Street, as it's name implies, is right on the river so the secenery is great. On the South side of Bay street you'll find lots of really nice parks with beautiful flowers blooming this time of year. It's an awesome place to just sit, chill, and people watch. They have trolley tours available also that will give you basic historical information and show you little odds and ends like where they filmed Forrest Gump and such. Savannah is also the south's 'most haunted city' so there are walking tours that you can take for ghostly site-seeing. Don't be surprised to see some 'ghost hunters' either.

Some places to eat that I recommend would be:

'Wasabi' on MLK Dr. If you like really good sushi at a really great price. Two people can have a nice lunch with soup, salad, beautiful sushi, and a drink for around 20 bucks.

'The Crab Shack' on Tybee Island. Tybee Island is a nice place to visit to catch the beach and for some good seafood. The Crab Shack is easy to find if you just follow the signs. They have fresh seafood that's affordable.

'Wet Willie's on River Street. Oh baby... Wet Willie's drinks are hard to beat. The cool thing about Savannah is that most of the good stuff is in walking distance- including the bars! My girl and I were there on a Monday for kareokee and we were not dissapointed. Hilarious. Plus the WALL of drinks are like Icees for grown-ups. Oh, and get the Chicken Nacos to snack on. Avoid the 'Call-a-Cab' however.

'Gelat-OH!' in City Market. If you've never had Gelato stop in a grab some. They give free samples and small portions if you're just looking to taste.

Avoid Tony Roma's on Bay Street. Not good. Glorified chain resturant.

It depends on what you eat... light meal? Sex after. Big meal? Work up an appetite.

Wow. There are so many similarities in cooking and writing. The main one being that anyone, who does it regularly, thinks they’re good at it. But what really makes me love both is the response that it gets from people. Good, bad, neutral- it doesn’t really matter, the point is there is always some sort of emotional feedback.

If I can make professionals from New York city give me 1,253 words of feedback, I’m a happy man. A happy Chef/Writer.

As an apology I will construct a huge statue of Paula in my front yard. I say huge because it will be a scale monument.

I'm from the great state of Alabama and find her absolutely appalling... What " positive stereotype " is she trying to portray...? There are many hard working women and single mothers in the south and I can tell you that the only ones who act like that are the dregs of our southern culture...In fact my ninety year old mother , who happens to be a great southern LADY , cannot bear to listen to her or watch her...She refers to Ms. Deen as that nasty trashy woman who screeches ... And, personally I have never heard a southerner say Y'ALL every few syllables ... And I was born,bred and raised in the south by great and true southern people.... She is an embarrassment ...

Okay everybody waiting for my response!

I forgot to mention- I'm doing "Easter" at her house next week because that's when my BF gets his son (the little guy was with his mom for easter). So I promise to come back next week & report on your questions regarding cooking in her kitchen.
I did a test run this Sunday with some asparagus. I used the recipe tossing it in Olive oil and roasting at 400 approx 8 min. From my BF's suggestion (who knew he was a treasure trove of asparagus knowledge as well?) adding a sprinkle of Mc Cormicks Monterey seasoning, I also used the suggestion of roasting some quartered baby portabella mushrooms with same treatment/ time. Everything turned out great! I'm am going to use this recipe next week as it's too easy to fail! Believe it or not somehow I was able to eat about 7 spears without gagging. (usually my response to asparagus) Even though I couldn't shake the unmistakable "green" flavor, it was balanced enough by the seasoning and the roasted mushrooms- I liked it! I would consider eating this again- thanks everybody for helping "expand my palate!"

@haneway....thanks for the tip re: Martha's asparagus-gruyere tart using puff pastry! I tried it this weekend and it was fabulous. Simple prep, with a rustic-elegant result. I've already shared the recipe, and a sample of the tart, with a co-worker who is always thrilled with new ideas for easy entertaining.

Bumping this thread because I really want to know how bisbee's dinner with FMIL went ... What asparagus dish did you make? What was it like cooking in her kitchen on a holiday?

We love asparagus -- thanks for all the great recipes! My favorite appetizer is an asparagus roll-up:

1/2 lb. thinly sliced prosciutto
24 fresh asparagus spears (young, thin spears work best)
6 oz cream cheese, softened
1 tsp cracked black pepper
1 tsp garlic powder

Mix together cream cheese, pepper, garlic powder; spread on slices of ham. Lay two asparagus spears on cheese and wrap ham around. Place in a shallow baking dish. Cover and microwave on high for two minutes. Serve warm or cold.

@ kerosena- (raising hand) I promise to report back to this particular thread after Easter! I promise not to leave you in suspense. Most likely I will do the 400 degree 8 min roast with the olive oil/salt/pepper treatment. The jury is out over adding the basalmic or the lemon/ goat cheese/ parm. I'm leaning toward the lemon/goat cheese due to its "spring conotations" All of the recipes sounded good & I'm planning on trying a bunch of them as my BF loves aspargus and I'm willing to give "gus" another go due to ya'lls help. (I think I've only had it boiled before- pwwwthwat!)

@dbCurrie THANK YOU for the chorizo help! The DTC Whole foods looked at me weird when I asked for spanish chorizo. I think I've tried every grocer/ meat market this side of Denver. I'll hit the boulder WF next time I'm over there. You are awesome!

My favorite preparation is Jean George's asparagus with morels. I don't know if there is a recipe around but it is the only way to eat it. If not, I agree with getting multiple varieties of types of asparagus. Even with a simple preparation the different types of asparagus will create a different flavor profile.
