Eating for Two: Tempting Wheatberry Salad for Grazing
The wheatberry salad recipe my grandpa swears by cuts out the fresh herbs and adds pineapple, walnuts, and sunflower seeds. He always keeps a bowl in the fridge and eats it for breakfast and on his green salads for some crunch
Wheatberry Delight
1 C Wheat
3 C Water
3/4 C Walnut chunks
2/3 C Craisins
1 8 oz. Can crushed pineapple (drained)
4 T Raw sunflower seeds
Bring water and wheat to a boil then simmer for 1 hr. and 15 mins. Drain water off wheat. Add walnuts, craisins, pineapple and sunflower seeds and mix together. Refrigerate and use on green salads, as cereal, added to cereal or just as a snack.
