Whole wheat flour is probably the easiest to add to my diet. You can substitute whole wheat flour easily and I've found that I actually prefer the chewy, dense texture that often accompanies it.

sweet sweet quinoa (although technically that's a seed, and not a grain. so if i were being technical, i'd say the humble yet delicious brown rice)
