New Years Eve Party - Need ideas for NEW appetizers

heres another one for you - if you like pineapple . Im australian and this is our sweet treat favourite:

Pineapple fritters!!!!

Sliced pineapple (whole) deep fried in a beer batter (see below)

when cooked (golden brown) dust in cane sugar lightly and serve hot.

Ingredients:

1 12 oz can light Beer
1 1/2 cups Flour
1/2 tsp Salt
1 cup Flour

New Years Eve Party - Need ideas for NEW appetizers

Heres my traditional New years eve meal for a small close group.

pound American lamb boneless leg, cut into 1-1/2-inch cubes
3 tablespoons olive oil
4 teaspoons fresh lemon juice
2 cloves garlic, finely chopped
1 tablespoon chopped fresh mint leaves
1 tablespoon chopped fresh oregano leaves
1 small red onion, cut into wedges
4 (12-inch) wooden skewers, soaked in water
Salt and pepper, to taste
1 small cucumber, seeded and thinly sliced
1 cup roasted red bell peppers, thinly sliced
1/2 cup crumbled feta cheese
4 pitas or flatbread, warmed
1/2 cup prepared cucumber salad dressing


In large sealable plastic bag, combine lamb, olive oil, lemon juice, garlic, mint and oregano. Refrigerate and marinate 1 hour or overnight. Remove meat from marinade and discard marinade. Alternately thread lamb and red onion onto skewers. Season kabobs with salt and pepper.

Grill over medium-hot coals 7 minutes per side or until desired degree of doneness: 145ºF for medium-rare, 160ºF for medium and 170ºF for well-done. Remove lamb from grill, cover and let stand 5 minutes. Slice lamb into thin strips.

In bowl, combine cucumber, roasted red peppers and feta; set aside.

To serve, split and open pita bread. Place grilled lamb and onions in pita bread, top with bell pepper and cucumber mixture and drizzle with dressing.

Butchers: Is there a need for them?

All this talk about Butchers... I am a Trade Qualified Butcher; yes the trade does exist but not in the US, here they are meatcutters with "certification" and I use that word as a toungue in cheek expression.

The trade of Butchery is dead. Although sad but it is a sign of the times.

I gained my trade in Australia (where all butchers are trade qualified). Starting out at the ripe old age of 16 and 80$, 7 days a week and required college education for 4 years with 6 years on the job training.

I have learnt all facets of the "trade" from slaughter to center of plate, breakdown of all carcasses including kangaroo!!

I have gained employment as a Butcher in San Diego and am to happy to pass on my experiences. I would like at some stage to faciliate formal Butchery education and am currently undertaking the investigations to do so.... It would be nice to see the Trade recognised again. I know that i would like to see the Bakers and candle stick makers return....
