Hummus

I like to add a little Asian toasted sesame oil, maybe half a teaspoon or so. I recently tried a recipe for Turkish Style hummus that uses plain Greek yogurt instead of tahini for something a little different.

Very interesting. I am going to cook mine longer and lower, although the 15 hours at 175 might not be doable this year. My favorite way to cook corned beef though is to smoke a thick cut on my Big Green Egg. About 4 hours at 225 to an internal temp of 180 concentrates the flavor like you wouldn't believe.

Knife Sharpener Recommendations?

The Chantry sharpener is great. It is actually not a sharpener, but two steels mounted in a base with a handle. They are mounted at the perfect angle so that all you have to do is hold your knife vertical and swipe it a few times. I bought mine in 1986 along with my first chef's knife. The knife is still razor sharp and has never been ground despite daily use.
