Do you go simple or complicated for your tailgate?

As I am a big time tailgater (can't wait for football season!) I am always looking for unique recipes.

I just stumbled accross this website: www.simpletailgating.com

A lot of the recipes look really good. Some seem to be very easy to make, some seem a little more complicated.

Which got me to wondering when it comes to recipes for home or for a party... do we as cooks prefer simple or a little more effort in which we reap the rewards?
